Aromatic Water Parsley Salad
How to Blanch and Season Fresh Water Parsley for a Delicious Side Dish
Hello everyone, it’s Henri’s Sister! Today, I’ll be making a water parsley salad using the leftover leafy parts from when I made my fermented skate and pork belly roll. While the stems can last quite a while if wrapped in newspaper and stored in a plastic bag in the fridge, sprouting and holding up well, the leaves spoil quickly. So, we need to use them up fast! It would be such a waste to throw them away.
Main Ingredients
- Water parsley (minari) 1/2 bunch
- Minced garlic 1/2 tsp
- Toasted sesame seeds 1 tsp
- Chopped scallion 1 Tbsp
- Sesame oil 1 Tbsp
- Flaky salt 1 Tbsp (leveled)
Cooking Instructions
Step 1
First, trim off any wilted or damaged leaves from the top part of the water parsley. We’ll only be using the fresh, tender top sections for this dish.
Step 2
Bring a pot of water to a rolling boil. Once boiling, add 1 tablespoon of flaky salt (leveled with a spoon).
Step 3
Carefully add the prepared water parsley to the boiling salted water. Since we are using the leaves and tender stems, we will blanch them for just 30 seconds. If you were using thicker stems, you would need to blanch them for longer.
Step 4
Immediately after blanching, transfer the water parsley to a bowl of cold water to rinse and cool it down. This step is crucial for maintaining its crisp texture.
Step 5
Once rinsed, gently but firmly squeeze out as much water as possible from the water parsley. Removing excess water is key to preventing the salad from becoming watery and bland.
Step 6
Finely chop the scallion you will be using for seasoning. You can use both the white and green parts.
Step 7
Cut the blanched water parsley into bite-sized pieces. If the strands are too long, they can be difficult to eat, so cutting them into lengths of about 3-4 cm is recommended.
Step 8
In a bowl, combine the chopped water parsley, chopped scallion, minced garlic (1/2 tsp), toasted sesame seeds (1 tsp), and sesame oil (1 Tbsp). Start with 1 tablespoon of flaky salt (leveled), but remember to taste and adjust the seasoning later before serving, as it can be added if needed. Gently mix and toss the ingredients together by hand, ensuring everything is well combined. Be careful not to overmix, which could crush the parsley.
