Aromatic Wild Garlic Bulgogi: A Taste of Spring

Main Ingredients

  • 300g Beef for Bulgogi, thinly sliced
  • 1/2 Onion
  • 1 Scallion (optional)
  • 1 bunch Fresh Wild Garlic (Dallae)
  • Small amount of Carrot
  • Small amount of Bell Pepper
  • 2 Tbsp Olive Oil

Bulgogi Marinade

  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Mirin (or Cheongju)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Minced Scallion
  • 2 tsp Sesame Oil
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, slice the beef into bite-sized pieces. Ensure the pieces are uniform in size for even cooking and easy eating.

In a bowl, combine the sliced beef with all the bulgogi marinade ingredients (soy sauce, sugar, mirin, minced garlic, minced scallion, sesame oil, and black pepper). Mix well by hand, ensuring each piece of meat is coated. Let it marinate for at least 30 minutes to allow the flavors to meld.

While the beef is marinating, prepare the vegetables. Slice the onion thinly. Chop the carrot and bell pepper into bite-sized pieces (about 0.5cm thick). Slice the scallion diagonally. (The scallion adds fragrance; feel free to omit if you prefer.)

Heat the olive oil in a ttukbaegi (Korean earthenware pot) or a skillet over medium heat. Add the marinated beef and stir-fry, breaking up the pieces with chopsticks or a spatula so they don’t stick together.

Once the beef is about 70-80% cooked, add the sliced onion, carrot, and bell pepper to the pot. Continue to stir-fry until the vegetables soften slightly and become translucent. Avoid overcooking the vegetables, as they can release too much moisture.

Finally, add the diagonally sliced scallion and the freshly washed and prepared wild garlic. Stir-fry for about 1 more minute, just until the wild garlic wilts. Adding the wild garlic at the end preserves its fresh, pungent flavor and prevents it from becoming tough. Your delicious Wild Garlic Bulgogi is ready! Serve hot with rice and fresh lettuce wraps for a delightful meal.
