To bring that delightful taste into my kitchen for longer, I’ve created a recipe for ‘Wild Garlic Pesto,’ a method beloved by many Germans, and paired it with pasta. While wild garlic pickles are wonderful for preserving, pesto truly captures the herb’s inherent, fresh taste and aroma, allowing it to be stored longer and used in various dishes. It’s fantastic spread on bread, and even more special when incorporated into pasta. If you’re a fan of wild garlic, this unique recipe promises a delightful culinary experience!

For the Wild Garlic Pesto

  • 100g fresh wild garlic leaves
  • 1 Tbsp salt
  • 1/3 cup cooking oil (or olive oil)

For the Wild Garlic Pesto Pasta

  • 2 Tbsp homemade wild garlic pesto
  • 2 servings spaghetti
  • Salt (for pasta water), to taste
  • Pecorino cheese (or Parmesan), grated, to taste
  • 2 fresh egg yolks

Cooking Instructions

Step 1

First, let’s make the aromatic wild garlic pesto. Wash the fresh wild garlic leaves thoroughly. Then, use paper towels to pat them completely dry. Ensuring there’s no residual moisture is key to keeping the pesto fresh for longer.

Step 2

Once the leaves are dry, chop them into pieces about 1 cm thick. This makes them easier to process in a blender or food processor.

Step 3

Place the chopped wild garlic, 1 tablespoon of salt, and 1/3 cup of cooking oil (or olive oil) into a blender or food processor. Blend until you achieve a smooth pesto consistency. You can adjust the amount of oil slightly to reach your desired texture.

Step 4

Transfer the well-blended pesto into a sterilized glass jar for storage. Kept refrigerated, it can stay fresh for about 1-2 weeks. If you’re making the pasta right away, you can proceed to the next steps after this.

Step 5

Now, let’s prepare the delicious wild garlic pesto pasta. Bring a large pot of water to a boil and add a pinch of salt. Once boiling, add the spaghetti and cook according to package directions, but aim for about 1 minute less than the recommended time to achieve an al dente texture.

Step 6

Drain the cooked spaghetti, reserving a little of the pasta water. Transfer the pasta to a large, deep bowl. Add 2 tablespoons of your homemade wild garlic pesto. Quickly toss the pasta and pesto together until evenly coated. Adding 1-2 tablespoons of the reserved pasta water can help create a silkier sauce.

Step 7

Serve the well-mixed wild garlic pesto pasta onto a plate. Finish by gently placing a fresh egg yolk on top of the pasta, and then sprinkle generously with Pecorino cheese (or Parmesan), if desired. This completes your wonderfully aromatic and savory wild garlic pesto pasta! Enjoy your meal!
