Asparagus is packed with asparagine, an excellent ingredient for relieving hangovers. For my husband, who enjoys a drink, I prepared these delicious Asparagus and Bacon Rolls. The savory bacon combined with the refreshing asparagus is simply irresistible, making it the perfect companion for your favorite beer. It’s a dish that truly calls for another sip!
Main Ingredients- 10 fresh asparagus spears
- 10 strips of bacon
Sauce Ingredients- 2 Tbsp mayonnaise
- 1 Tbsp whole grain mustard
- 2 Tbsp mayonnaise

Cooking Instructions
Step 1
Begin by washing the asparagus spears thoroughly under running water. Trim off the tough, woody ends from the bottom of the stalks. Cut each spear in half to create bite-sized pieces. If your asparagus is particularly tender, you may not need to peel it. However, if the outer skin feels tough, a vegetable peeler can be used to gently remove a thin layer for a more tender result.
Step 2
Next, cut each strip of bacon in half lengthwise. This will make it easier to wrap around the asparagus.
Step 3
On a clean plate or cutting board, lay out one half-strip of bacon. Place a piece of asparagus diagonally on top of the bacon. Tightly roll the bacon around the asparagus to form a neat roll. Ensure it’s wrapped securely, as a loose roll might unravel during cooking.

Heat a non-stick skillet over medium heat. Do not add any oil, as the bacon will render its own fat. Carefully place the asparagus and bacon rolls seam-side down in the hot pan. This helps to seal the roll and prevent it from coming apart while cooking.

Cook the rolls, turning them occasionally, until the bacon is golden brown and crispy on all sides, and the asparagus is tender-crisp. The bacon provides plenty of saltiness, so they are delicious on their own. However, dipping them in the sauce (prepared in the next step) elevates the flavor to an entirely new level!

To make the dipping sauce, combine the mayonnaise and whole grain mustard in a small bowl. Stir until well blended.
