Today, I’m inviting a dear friend over, who used to be my husband’s colleague but is now like a sister to me. It’s a special day for us! The first dish I ever made for them was these BBQ pork ribs, and they were a huge hit! Enjoy the fantastic combination of rich, juicy meat and sweet and tangy BBQ sauce. Make your table special with this recipe!
Main Ingredients- 1 rack of pork spare ribs (approx. 10 ribs)
- 500ml milk (for tenderizing and removing odor)
- 1 large onion
- Rosemary or other herbs (for odor removal and flavor)
BBQ Sauce Marinade- 7-8 Tbsp bottled BBQ sauce
- 2 Tbsp Worcestershire sauce
- 1-2 Tbsp ketchup
- 2 Tbsp hot sauce
- 1 tsp minced garlic
- 2 Tbsp corn syrup (or rice syrup)
- 2 Tbsp cooking wine (mirin or sake)
- Pinch of black pepper
- 7-8 Tbsp bottled BBQ sauce
- 2 Tbsp Worcestershire sauce
- 1-2 Tbsp ketchup
- 2 Tbsp hot sauce
- 1 tsp minced garlic
- 2 Tbsp corn syrup (or rice syrup)
- 2 Tbsp cooking wine (mirin or sake)
- Pinch of black pepper
Cooking Instructions
Step 1
If you have fresh pork spare ribs, you don’t need to soak them in water to remove blood. You can directly marinate them in milk. Let the ribs rest in the milk for at least 30 minutes to 1 hour. This will effectively remove any gamey odor and impurities.
Step 2
After the milk soak, rinse the ribs thoroughly under cold running water. Place the ribs in a pot. Add the onion (you can use onion skins or a whole onion), a bit of black pepper, and any herbs known for removing meat odors (like bay leaves). This step is to boil the ribs and eliminate any unwanted smells. (You can also use the boiled onion and herbs to enhance the flavor of the braising liquid.)
Step 3
Now, let’s make the magical BBQ sauce marinade! In a bowl, combine 7-8 Tbsp of bottled BBQ sauce, 2 Tbsp of Worcestershire sauce, 1-2 Tbsp of ketchup, and 2 Tbsp of hot sauce. Mix them well. Add 1 tsp of minced garlic for aroma, 2 Tbsp of corn syrup for a subtle sweetness, 2 Tbsp of cooking wine to further tenderize and add flavor, and finally, a pinch of black pepper. Whisk everything together until well combined. (Tip: My husband likes it spicier, so I added finely chopped Cheongyang chili peppers. Feel free to adjust the spiciness to your preference!)
Step 4
Rinse the boiled ribs under cold water again to cool them down. Line a baking sheet with parchment paper and arrange the clean ribs side by side. Generously brush the ribs with the prepared BBQ sauce. If you have time, you can place them in a cold oven (unheated) for 30 minutes to 1 hour to let the marinade penetrate deeper. This resting period enhances the flavor significantly. (This step is optional but highly recommended for better results.)
Step 5
Take the marinated ribs out and coat them once more with the sauce. Preheat your oven to 210-230°C (410-445°F). Place the ribs in the oven and bake for 5 minutes. Carefully remove them, flip the ribs, brush with more sauce, and bake for another 5 minutes. Flip them one last time, brush with sauce again, and bake for 10 minutes. This process results in perfectly tender ribs with a slightly caramelized exterior! If you don’t have an oven, you can achieve a similar delicious result using a frying pan.
Step 6
Voila! Your beautiful, golden-brown BBQ pork ribs are ready. The herbs sprinkled on top are purely for garnish and to ensure any lingering odors are neutralized – it’s my personal touch!
