Batter Ingredients- 100g All-purpose flour
- 2 Fresh eggs
- 100ml Water
- 100ml Milk
Cooking Instructions
Step 1
In a large bowl, crack the 2 fresh eggs. Add 100ml of water and 100ml of milk, then whisk gently with a fork or a whisk until well combined. It’s important to mix smoothly to avoid any eggy smell.
Step 2
Sift 100g of all-purpose flour into the bowl. Sifting helps to remove lumps and creates a smoother batter. Add a pinch of salt and whisk until you have a smooth, lump-free consistency. Be careful not to overmix, as this can develop gluten and make the batter tough.
Step 3
Cover the finished batter with plastic wrap and let it rest in the refrigerator for at least 1 hour, or preferably overnight. This resting period allows the flavors to meld and results in a more delicious final dish. If you’re short on time, resting it at room temperature for about 30 minutes before use will still yield a tasty Toad in the Hole.
Step 4
Pour a generous amount of vegetable oil into an oven-safe dish (like a cast-iron skillet or baking dish). Place the dish in an oven preheated to 200°C (400°F) and let it heat for about 15 minutes. Preheating the oil until it’s very hot is crucial for the batter to puff up and become crispy immediately upon contact.
Step 5
While the dish is preheating in the oven, brown the sausages in a separate pan over medium-low heat, turning them occasionally until they are golden brown on all sides. As the sausages cook, they will release fat, so you can dab it away with a paper towel if needed. This step helps to enhance their flavor.
Step 6
Carefully remove the hot, preheated dish from the oven (be cautious of burns!). Place the browned sausages into the hot oil. You can add the sausages whole or slice them into bite-sized pieces as shown in the picture. Arranging the sausages before pouring the batter ensures they are well-distributed.
Step 7
Take the rested batter out of the refrigerator and give it one last quick whisk just before pouring. Then, carefully pour the batter into the hot dish around the sausages. Return the dish to the 200°C (400°F) oven and bake for 20 to 30 minutes, or until the batter is puffed up, golden brown, and the edges are wonderfully crisp. Avoid opening the oven door frequently during baking to ensure the batter rises properly.
