An Easy Recipe for Delicious Yaksik Using an Electric Rice Cooker
A perfect chewy rice cake for when you’re feeling peckish, serving as a great snack or a meal replacement! Ingredients for Yaksik- 3 cups glutinous rice (standard paper cup measurement)
- 3 walnuts (whole)
- 2 tablespoons pumpkin seeds
- 2 tablespoons pine nuts
- 7 dates
- 2 tablespoons almonds
- 1/2 cup brown sugar
- 1/3 cup soy sauce (jin ganjang)
- 2 tablespoons sesame oil
Cooking Instructions
Step 1
First, rinse the glutinous rice thoroughly under running water. Soaking the rice is crucial for achieving a chewy texture. Soak it in water for at least 3 hours, or preferably overnight.
Step 2
After soaking for over 3 hours, drain the glutinous rice completely using a sieve. If there’s residual moisture, your Yaksik might become too soft, so gently pat it dry with paper towels if needed.
Step 3
Prepare the additional ingredients for the Yaksik. Break the walnuts into bite-sized pieces. Remove the seeds from the dates and roll them up before slicing. The pumpkin seeds, pine nuts, and almonds can be used as they are. (Feel free to adjust the types and quantities of nuts to your preference.)
Step 4
Place the drained glutinous rice into the inner pot of your electric rice cooker. In a separate bowl, combine the brown sugar and soy sauce, stirring until the sugar is completely dissolved. Adding a tiny bit of water to the soy sauce can help dissolve the sugar more easily. (The ratio of soy sauce to sugar can be adjusted to your taste, but it’s recommended to follow the recipe for your first attempt.)
Step 5
Pour the dissolved soy sauce and sugar mixture evenly over the glutinous rice. Then, add all the prepared nuts, including walnuts, pumpkin seeds, pine nuts, dates, and almonds. Crucially, add only enough water to barely cover the rice. Too much water will result in a mushy Yaksik. Select the ‘Mixed Grains’ or ‘Quick Cook’ setting on your rice cooker. (Cooking time is approximately 40-45 minutes.)
Step 6
Once the cooking cycle is complete, open the rice cooker and use a rice paddle to thoroughly mix the Yaksik. Ensure all ingredients are evenly distributed for a consistent chewy texture.
Step 7
Prepare a square mold or dish to hold the Yaksik. Carefully transfer the cooked Yaksik from the rice cooker into the prepared mold.
Step 8
While still warm, press down firmly with the rice paddle to shape the Yaksik. You can score it into serving portions with a knife or let it cool and set in the mold before cutting.

Cut into desired serving sizes and arrange on a plate, or shape into bite-sized pieces for easy eating.
