Authentic Mazesoba at Home
Easy Mazesoba Recipe: Flavorful with Common Pantry Ingredients, No Doubanjiang or Tsuyu Needed!

Noodles and Vegetables- Udon noodles, for 2 servings
- 1/2 scallion, finely chopped
- 1/2 bunch chives, finely chopped
- A pinch of shredded nori (for garnish)
Pork Seasoning- 300g ground pork
- 1 Tbsp minced garlic
- 2 Tbsp sake (cooking wine)
- 1 Tbsp plum extract
- 2 Tbsp sugar
- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 2 Tbsp chili oil
- A pinch of salt
- A pinch of black pepper
Soy Sauce Base (Tsuyu Substitute)- 1 Tbsp soy sauce
- 1 Tbsp anchovy sauce
- 1 Tbsp oligodang (Korean corn syrup)
- 2 Tbsp water
- 300g ground pork
- 1 Tbsp minced garlic
- 2 Tbsp sake (cooking wine)
- 1 Tbsp plum extract
- 2 Tbsp sugar
- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 2 Tbsp chili oil
- A pinch of salt
- A pinch of black pepper
Soy Sauce Base (Tsuyu Substitute)- 1 Tbsp soy sauce
- 1 Tbsp anchovy sauce
- 1 Tbsp oligodang (Korean corn syrup)
- 2 Tbsp water
Cooking Instructions
Step 1
Heat 2-3 tablespoons of cooking oil in a deep pan or wok over medium-low heat. Add 1 tablespoon of minced garlic and sauté until fragrant, infusing the oil with aromatic flavor.
Step 2
Add 300g of ground pork to the pan. Break it apart with your spatula and stir-fry over high heat until the pork is no longer pink and becomes nicely browned. Thoroughly cooking the pork is key to developing its flavor.
Step 3
Once the pork is mostly cooked, add 2 tablespoons of sugar, 1 tablespoon of plum extract, and 2 tablespoons of sake. Stir-fry together to incorporate these ingredients, which will help tenderize the pork and add a pleasant sweetness.
Step 4
Now, add 1 tablespoon of soy sauce and 1 tablespoon of oyster sauce to deepen the flavor profile. Stir well to coat the pork evenly.
Step 5
Add 2 tablespoons of chili oil for a touch of spicy heat. Pour in about 1/3 of a paper cup of water (approximately 50ml). Season with a pinch of salt and pepper to your preference. Increase the heat to high and let it simmer and reduce, allowing the sauce to thicken and coat the pork beautifully. Stir occasionally to prevent sticking.
Step 6
In a separate pot, bring plenty of water to a boil. Add the udon noodles for 2 servings and cook for about 2 minutes. Be careful not to overcook them; using a timer is recommended for perfect al dente noodles.
Step 7
Drain the cooked udon noodles and rinse them under water. If you prefer them warm, a quick rinse with hot water will do. For a chilled version, rinse thoroughly with cold water until they are firm and bouncy. Choose the method that suits your preference!
Step 8
Place the prepared udon noodles in a serving bowl. Generously spoon the seasoned ground pork mixture over the noodles. Drizzle 1-2 tablespoons of the homemade soy sauce base (or tsuyu) over everything, adjusting the amount to your liking. It’s best to start with 1 tablespoon and add more if needed for your taste. Sprinkle with the finely chopped scallions, chives, and shredded nori for garnish.
Step 9
Finally, place a fresh egg yolk in the center of the bowl. When you mix the yolk with the noodles and the flavorful pork sauce, it creates a wonderfully rich and creamy texture. Enjoy your delicious homemade mazesoba!
