Cooking Instructions
Step 1
First, it’s crucial to prepare the chicken thoroughly. Trim excess fat from the tail and wing tips, and rinse the chicken inside and out to remove any remaining blood or giblets. In a large pot, add enough water to cover the chicken. Bring to a boil, then add the chicken and blanch for about 5 minutes. This step helps remove impurities and any gamey odors. Drain the chicken and rinse it under cold running water to ensure it’s clean.
Step 2
Now, let’s make that rich Samgyetang broth! Using a pressure cooker will save you time and extract more flavor. Place the prepared chicken, whole garlic cloves, and the store-bought Samgyetang herbal packet into the pressure cooker. Pour in the 1.5L of water. Secure the lid and bring to high heat. Once the whistle blows, reduce the heat to medium-low and simmer for about 1 hour until the chicken is very tender and the broth is deeply flavorful. If using a regular pot, simmer on medium-low heat for approximately 1.5 hours after it comes to a boil. The key is to simmer until the chicken is falling-off-the-bone tender.
Step 3
Finally, let’s add the finishing touches for aroma and seasoning. Wash and coarsely chop the leek. Once the chicken is fully cooked, ladle the Samgyetang into serving bowls. Generously top with the chopped leeks; their fresh aroma will infuse beautifully into the hot soup. Season with salt and pepper to your preference. Serve with rice for a truly satisfying and nourishing meal!
