Cooking Instructions
Step 1
Rinse the chicken drumsticks thoroughly. In a pot, combine the chicken drumsticks with 1 liter of water and simmer for 30 minutes to create a rich and flavorful chicken broth. Skim off any foam that rises to the surface during simmering for a cleaner broth.
Step 2
Thinly slice the onion. Cut the red bell pepper, yellow bell pepper, and eggplant into bite-sized pieces. Adding a variety of colorful vegetables will make the dish visually appealing and enhance its overall flavor.
Step 3
Melt the butter in a deep pot over medium heat. Add the sliced onions and sauté until translucent and fragrant. Once the onions are softened, add the crushed whole tomatoes, 3 blocks of curry roux, 4 cups of the prepared chicken broth, 2 bay leaves, a pinch of salt, and a pinch of black pepper. Stir well to combine all ingredients and bring to a gentle simmer. Cook over low heat to allow the curry flavors to deepen.
Step 4
Now it’s time to grill the vegetables and chicken. Lightly grease a grill pan or a regular frying pan with oil. Place the cut bell peppers and eggplant and grill until nicely browned and slightly charred. Grilling the chicken drumsticks alongside will add extra flavor. Remove from heat once they have a good char.
