Authentic Street Food Style Tteokbokki with Thick Rice Cakes

Main Tteokbokki Ingredients- 500g thick rice cakes (Garaetteok)
- 3 sheets of square fish cakes
- 1 large green onion
Tteokbokki Sauce Ingredients- 4 cups water (approx. 800ml)
- 4 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 3 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp corn syrup or rice syrup
- 1/2 Tbsp minced garlic
- 4 cups water (approx. 800ml)
- 4 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 3 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp corn syrup or rice syrup
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
First, wash and prepare the large green onion. Slice it lengthwise in half, then cut into pieces about 10cm long. This method helps the green onion’s fresh flavor infuse into the tteokbokki and makes it easier to eat.
Step 2
Cut the square fish cakes into bite-sized pieces. Typically, cutting them into rectangles about 3cm x 5cm provides a similar texture to the rice cakes. This will add a savory depth to your tteokbokki.
Step 3
Prepare the garaetteok, the star of this tteokbokki. Bring a pot of water to a boil and briefly blanch the rice cakes for about 1-2 minutes. This softens them, allowing the sauce to penetrate better, and prevents them from becoming hard or sticking together during cooking. Rinse the blanched rice cakes under cold water.
Step 4
Now it’s time to make the delicious tteokbokki sauce. Pour 4 cups of water into a pan or pot. Add 4 Tbsp gochujang, 2 Tbsp soy sauce, 2 Tbsp sugar, 3 Tbsp gochugaru, 2 Tbsp corn syrup, and 1/2 Tbsp minced garlic. Stir well over high heat until the sauce comes to a boil. Once boiling, your flavorful tteokbokki sauce is ready.
Step 5
Add the prepared rice cakes and sliced fish cakes to the simmering sauce. Reduce the heat to medium and stir occasionally for about 5-7 minutes, or until the sauce thickens and coats the rice cakes and fish cakes well. It’s important to cook until the rice cakes are tender and the sauce is rich and slightly reduced.
Step 6
Finally, add the sliced green onion and simmer for another minute or so. The aromatic green onion will further enhance the flavor of the tteokbokki. Cook over high heat for about 1 more minute until the green onion is slightly tender, then turn off the heat. Serve your delicious garaetteok tteokbokki warm and enjoy!
