Main Ingredients- 1 Soft baguette
- 2 Fresh eggs
- A pinch of fine salt
- A pinch of black pepper
- 1/8 Onion, finely chopped
- 1/8 Red bell pepper, finely chopped
- 1/6 Green bell pepper, finely chopped
- 2 Strips of imitation crab meat (surimi), finely shredded or chopped
- 2 Slices of cheese
Special Sauce- 50g Mayonnaise
- 1 Tbsp finely chopped onion
- A pinch of sugar
- A drizzle of maple syrup

Cooking Instructions
Step 1
In a large bowl, crack 2 eggs. Add the finely chopped red bell pepper, green bell pepper, onion, and the shredded or chopped imitation crab meat. Season with a pinch of salt and pepper. Whisk everything together until well combined. Lightly grease a heated pan and pour the egg mixture, shaping it into a long rectangle to fit the baguette. Aim for a moderate thickness, sized to match the bread.
Step 2
Carefully make a lengthwise cut along the top of the soft baguette. Cut only partway through, creating a pocket for the filling without completely separating the bread. Handle the baguette gently to prevent it from breaking.
Step 3
In a small blender or bowl, combine the mayonnaise, finely chopped onion, and a pinch of sugar. Blend until smooth. Mix in a little maple syrup for added sweetness and flavor. Adjust the sugar to your preference. Spread this special sauce generously on the inside of the prepared baguette.

After spreading the sauce inside the bread, carefully place the rectangular egg mixture, cooked in the pan earlier, into the cut pocket of the baguette. You can trim the egg mixture to fit the bread perfectly for a neater appearance.

Place 2 slices of cheese on top of the egg mixture inside the baguette. The cheese will gently enclose the egg, preventing it from spilling out when you handle the toast. The melting cheese will add a rich flavor.

To ensure the filling stays securely inside and doesn’t spill out, use skewers to firmly hold the baguette together on both sides. The skewers will help maintain the shape by pressing the ingredients firmly in place. Make sure to insert the skewers thoroughly to keep the bread halves from opening.
