Main Ingredients- Dried shrimp, 1/3 paper cup

Cooking Instructions
Step 1
First, prepare all your ingredients. You’ll need 1/3 paper cup of dried shrimp, 2 fresh eggs, and 1/8 wedge of pineapple. Finely chop about 1 paper cup of scallions. Measure out 1/3 paper cup of olive oil and prepare 2 bowls of warm, cooked rice.
Step 2
Heat the olive oil generously (1/3 paper cup) in a pan over medium-low heat. Add the chopped scallions and gently fry them to release their fragrance, creating ‘scallion oil.’ This step is crucial, as it forms the flavor base, much like in Paik Jong-won’s recipes. Allow the scallions to infuse the oil with their aroma.
Step 3
Once the scallions are fragrant and slightly softened, push them to one side of the pan. Crack the 2 eggs into the empty space. Scramble the eggs gently, stirring occasionally until they are cooked through but still tender. Then, add the 1/3 paper cup of dried shrimp and stir-fry briefly with the eggs and scallions to combine their flavors.
Step 4
Add the 2 bowls of warm rice to the pan. Break up any clumps with your spatula and stir-fry to mix with the ingredients. Pour the prepared sauce mixture (2 Tbsp oyster sauce, 1 Tbsp fish sauce, 1 Tbsp sugar, 1 Tbsp water) over the rice. Finally, add the 1/8 wedge of pineapple and stir-fry everything quickly over high heat until well combined. This rapid stir-frying helps retain the pineapple’s texture.
