Among the most iconic dishes that come to mind when thinking of Southeast Asian cuisine is stir-fried noodles: Pad Thai! Prepare a feast for your dinner table tonight with this convenient homemade version of authentic Thai street food. The chewy rice noodles, fresh vegetables, and savory sauce blend together to create a rich and satisfying flavor profile.
Main Ingredients- 1 pack wide rice noodles (approx. 200g)
- 4 stalks spring onions (scallions)
- 10 cloves garlic
- 1 carrot
- 1 avocado (optional)
- 4 eggs
- 1 bag bean sprouts (approx. 100g)
- 1 bunch fresh cilantro (coriander)
- Mixed seafood (squid, mussels, etc.)
- 10 shrimp
Pad Thai Sauce- 3 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 2 Tbsp fish sauce
- 1 Tbsp sugar (2 Tbsp if you prefer sweeter)
- 4 Tbsp olive oil
- 3 Tbsp oyster sauce
- 1 Tbsp soy sauce

Cooking Instructions
Step 1
Select Pad Thai rice noodles known for their chewy texture and wide strands. You can choose other types of rice noodles based on your preference.
Step 2
Before you begin cooking, soak the rice noodles in warm water until they are pliable. Gently separate the noodles to prevent them from sticking together.
Step 3
Prepare all the vegetables. Finely chop the 4 spring onions. Thinly slice 10 cloves of garlic. Julienne the carrot into thin strips. Remove the pit from the avocado and chop it into bite-sized pieces. (Carrot and avocado are optional ingredients.)
Step 4
Heat 4 tablespoons of olive oil in a large wok or skillet over medium-low heat. Add the prepared spring onions, garlic, carrots, and avocado. Stir-fry until fragrant to release the vegetables’ aromas. *If you like it spicy, add thinly sliced chili peppers to sauté along with the vegetables.*
Step 5
Once the fragrant aroma of the spring onions rises, prepare for the next stage of stir-frying.
Step 6
Add the mixed seafood and 10 shrimp to the pan and stir-fry over high heat until cooked through. When the shrimp turn pink and are cooked, push the stir-fried ingredients to one side of the pan. Crack the 4 eggs into the empty space and scramble them until just set.
Step 7
Once the scrambled eggs are cooked, gently mix them with the other ingredients. Ensure everything is evenly combined.
Step 8
Add the drained, soaked rice noodles to the pan.
Step 9
Here is the oyster sauce and fish sauce (act jet) that I use. These sauces are key to the deep, authentic flavor of Pad Thai.

Now it’s time to add the star of the Pad Thai sauce: Combine 3 tablespoons of oyster sauce, 1 tablespoon of soy sauce, 2 tablespoons of fish sauce, and 1 tablespoon of sugar (use 2 tablespoons if you prefer a sweeter taste). Stir-fry everything together with the ingredients. The moisture from the seafood and noodles usually keeps the stir-fry from becoming too dry, but if it seems too sticky, add about 1/2 cup of water and continue stir-frying until the desired consistency is reached.
Step 11
Finally, add the fresh cilantro and bean sprouts. Toss quickly to combine. Stir-fry just long enough to lightly wilt the bean sprouts, preserving their refreshing crunch.
Step 12
Turn off the heat and adjust the seasoning to your taste. If it needs more flavor, add a little extra oyster sauce or fish sauce.
Step 13
Transfer the finished Pad Thai to a serving plate. For an added touch of crunch and nutty flavor, sprinkle with crushed roasted peanuts if desired.

Garnish with fresh cilantro leaves and serve with a wedge of lemon or lime for a burst of citrusy freshness. Lime is even better if available!
