As I prepare my third Vietnamese spring roll video, I’m excited to share my personal tips and know-how, along with brand new techniques to make them even more delicious. This time, I’m revealing an exclusive method for julienning mangoes that nobody else shows, plus two special dipping sauces that will elevate your spring roll experience. Spring Roll Ingredients
  • Rice paper wrappers
  • Vermicelli rice noodles, 100g
  • Shrimp (cooked)
  • Crab sticks
  • Lettuce
  • Bean sprouts, 300g
  • Cilantro
  • Ripe apple mango, 1 piece
  • Cucumber, 1 piece

Vietnamese Nuoc Cham Sauce (Spicy, Sweet, and Sour)
  • Minced chili, 1 Tbsp
  • Minced garlic, 1 Tbsp
  • Sugar, 1 Tbsp
  • Fish sauce, 1 Tbsp
  • Vinegar, 2 Tbsp
  • Lime juice, 1 tsp
  • Water, 4 Tbsp

Pineapple Sauce (Sweet Fruity Flavor)
  • Pineapple, 150g
  • Mustard, 1 tsp
  • Lemon juice, 1 tsp
  • Mirin, 2 Tbsp
  • Vinegar, 2 Tbsp
  • Orange juice, 2 Tbsp
  • Olive oil, 4 Tbsp

Cooking Instructions

Step 1

First, wash the lettuce thoroughly. Cut larger leaves into approximately 10cm lengths. If a leaf is still too big, cut it in half again for easier handling.

Step 2

Chop the cilantro to match the size of the lettuce leaves. Add cilantro according to your preference, as some people have a strong reaction to its flavor.

Step 3

Here’s the secret to perfectly julienned mangoes! First, use a peeler or knife to carefully remove the mango skin. To keep the mango stable while cutting, slightly trim the bottom to create a flat surface. Insert your knife deeply towards the seed and slice down one side of the mango all the way to the end. Then, stand the mango up and slice the remaining sides. This method ensures beautifully cut, uniform mango strips!

Step 4

Peel the cucumber using a vegetable peeler, then scoop out and discard the seeds. Slice the cucumber into sticks (julienne). This technique helps maintain its crispness and prevents it from becoming soggy too quickly.

Step 5

Finely mince the chili and garlic for the Nuoc Cham sauce. Combine all the sauce ingredients in a bowl and mix well until everything is thoroughly incorporated.

Step 6

After mixing all the Nuoc Cham sauce ingredients, taste it. Adjust the amounts of fish sauce, lime juice, or lemon juice to suit your personal preference. The key is to balance the sweet, sour, and savory flavors!

Step 7

Let’s make the Pineapple Sauce! Add all the ingredients (pineapple, mustard, lemon juice, mirin, vinegar, orange juice, and olive oil) to a blender and process until smooth. This creates a delightful sauce with a balance of fruity sweetness and tanginess.

Step 8

Cut the crab sticks in half crosswise into approximately 5cm pieces for easy wrapping.

Step 9

Use pre-cooked shrimp for convenience. Cut them in half lengthwise. Adding shrimp to your spring rolls not only enhances the flavor and texture but also adds a beautiful pop of color.

Step 10

Rinse the bean sprouts thoroughly under running water. Place the rinsed sprouts in a microwave-safe bowl and microwave for about 2 minutes. Remove from the microwave, season lightly with salt, and let them cool completely. This step helps keep the bean sprouts wonderfully crisp.

Step 11

For the vermicelli rice noodles: Bring water to a boil, add the noodles, and immediately turn off the heat. Cover the pot and let the noodles steep for 3-4 minutes. After the time is up, uncover and gently stir the noodles with chopsticks to loosen them.

Step 12

Rinse the cooked noodles under cold running water. Drain them thoroughly to remove as much excess water as possible. This prevents the rice paper from tearing when you wrap the rolls.

Step 13

Now that all your ingredients are prepped, it’s time to assemble! Briefly dip a rice paper wrapper in warm water until pliable, then place it on a clean surface. Arrange your desired fillings – vegetables, noodles, shrimp, crab sticks – onto the wrapper. Carefully fold and roll to create neat spring rolls.
