Ggot-mu-jeon Soy Dipping Sauce

  • 3 Tbsp soy sauce
  • A little green onion (finely chopped)
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds
  • A pinch of red pepper flakes (optional)
  • A pinch of black pepper (optional)

First, wash the radish thoroughly. Then, slice it into thin, round pieces. Slicing them thinly will ensure they cook quickly and have a tender texture.

Bring a pot of water to a boil with a pinch of salt. Lightly blanch the sliced radish for about 1-2 minutes. Be careful not to overcook it, as it can become mushy. Immediately after blanching, rinse the radish under cold water to remove excess moisture and drain it well in a colander. This step helps reduce any slight bitterness and softens the radish.

Once the radish is drained, lightly coat each slice with pancake mix (buchim garu) on both sides. A thin coating of flour will help the batter adhere better and contribute to a crispy finish when fried.

In a bowl, combine 2 cups of pancake mix and a pinch of salt. Gradually add water while mixing to create a batter that is not too thin – it should be thick enough to coat the radish but still flow slowly off a spoon.
