I spotted an avocado for just 1,000 won at the supermarket and couldn’t resist buying it! I almost doubted if the price was correct, as I regularly check avocado prices and this was exceptionally low. I carefully inspected its quality, wondering if it was priced cheaply due to imperfections. Even though I wasn’t buying many, I wanted to ensure I picked good ones. My initial plan was to buy ingredients for a different dish, but the combination of fresh, affordable avocados unexpectedly led me to change my menu to Avocado Natto Bibimbap. I had received several packs of natto as gifts and was figuring out how to use them, and eating them with avocado today turned out to be a brilliant idea. Although my original plan changed, I’m sharing this recipe for a delicious and healthy Avocado Natto Bibimbap that will surely satisfy you!
Main Ingredients
- 1/2 Avocado
- 1 pack Natto
- 1 Egg
- 1 bowl Rice (cooked)
- 1/2 handful Baby greens
Special Bibimbap Sauce
- 2 Tbsp Soy sauce
- 1/3 Tbsp Wasabi (adjust to taste)
- 2 Tbsp Soy sauce
- 1/3 Tbsp Wasabi (adjust to taste)
Cooking Instructions
Step 1
First, gently rinse the fresh baby greens under cool running water. Thoroughly drain them, or pat them dry with a paper towel to remove excess moisture. This ensures they don’t make your bibimbap watery.
Step 2
Prepare the natto by opening the packet. Add the included sauce (or soy sauce if preferred) and stir vigorously with chopsticks until a sticky, foamy texture develops. Aim for about 30-50 stirs to achieve a smoother consistency and enhanced flavor.
Step 3
Cut the ripe avocado in half, remove the pit, and peel off the skin. Slice it thinly into about 0.5 cm thick pieces. Slicing them thinly helps them integrate better with the rice and other ingredients.
Step 4
Fry an egg to your preference. Whether you like it sunny-side up with a runny yolk or fully cooked, prepare the fried egg as you enjoy it. A runny yolk mixing into the rice adds a wonderful richness and flavor.
Step 5
Now, assemble your bibimbap. Place the warm cooked rice into your chosen bowl. Drizzle the special bibimbap sauce (soy sauce and wasabi mixture) evenly over the rice. Feel free to adjust the amount of sauce to your liking.

Finally, artfully arrange the prepared ingredients on top of the rice: the fried egg, fresh baby greens, the stirred natto, and the sliced avocado. Once everything is beautifully arranged, your delicious and nutritious Avocado Natto Bibimbap is complete! Mix well and enjoy.
