Baby-Friendly Beef and Broccoli Pancakes: Soft, Nutritious Toddler Meal Side Dish
Cooking a Delicious Beef and Broccoli Pancake for a 17-Month-Old Baby
My baby absolutely loves broccoli, so I’m always looking for new ways to incorporate it into their meals. This time, I decided to combine it with some tender beef and make soft, savory pancakes. It’s a wonderful way to offer a variety of nutritious ingredients in a fun and appealing format.
Main Ingredients- Beef (Eye of Round) 20g (finely chopped for baby)
- Fresh Broccoli 46g (washed thoroughly)
Cooking Instructions
Step 1
First, separate the washed broccoli into small florets. Finely chop the beef into small pieces suitable for your baby. Place the prepared broccoli and beef into a food processor or chopper and blend until finely ground. Ensure there are no large chunks remaining for a smooth texture.
Step 2
Add 2 tablespoons of pancake mix to the finely ground beef and broccoli mixture. If the batter seems too thick, add 2 tablespoons of water. Mix everything thoroughly until well combined, ensuring there are no lumps.
Step 3
The batter should be thick enough to drop off a spoon in clumps, not runny. This consistency is perfect for making pancakes.
Step 4
Heat a lightly oiled frying pan over medium heat. Spoon portions of the batter onto the pan, forming small rounds. Place a slice of baby cheese on top of each pancake, and then cover the cheese with a little more batter. This will help keep the cheese contained while cooking.
Step 5
Gently press the edges with a spatula to prevent the cheese from oozing out. Cook on medium-low heat until both sides are golden brown and slightly crispy. Once beautifully golden, your nutritious beef and broccoli pancakes for baby are ready! Cut into bite-sized pieces and serve warm.
