Main Ingredients- 45g Fine Oatmeal (use baby-grade oats)
- 5g Unsalted Butter
- 1 Egg
- 1/2 Ripe Banana
- 15 Fresh Blueberries
- 30ml Formula or Breast Milk (as per baby’s usual feed)
Cooking Instructions
Step 1
First, take half of a ripe banana. Using a spoon or fork, mash it thoroughly until it’s smooth and free of lumps. Since this is for a baby, ensuring a lump-free texture will make it easier for them to eat.
Step 2
In the bowl with the mashed banana, crack in one egg and whisk it together until well combined. If your baby has had any allergic reactions to egg whites or is still in the early stages of solids, you can opt to use only the egg yolk. If using just the yolk, you might want to slightly reduce the amount of oatmeal to achieve a better batter consistency.
Step 3
Pour in the 30ml of formula or breast milk and mix well into the batter. Next, place the 5g of unsalted butter in a small microwave-safe bowl and heat for about 30 seconds until completely melted. Add the melted butter to the batter and stir until all ingredients are evenly incorporated.
Step 4
Now it’s time to add the 45g of fine oatmeal. Stir the oatmeal into the batter, mixing until all ingredients are uniformly combined and there are no lumps. The batter will start to thicken as the oatmeal absorbs the liquid.
Step 5
Finally, gently fold in the 15 fresh blueberries. These will add a lovely sweetness and color to the bread, as well as a fun texture. Be careful not to overmix, as this can cause the blueberries to break down too much.
Step 6
Spoon the finished batter into baby-sized muffin cups. Bake in a preheated air fryer at 160°C (320°F) for approximately 15 minutes, or until the bread is golden brown and cooked through. Baking times may vary slightly depending on your air fryer model. Enjoy your homemade oatmeal bread!
