Baby’s Jjimdak (Braised Chicken)
[Baby Jjimdak] Hong Yang-gaeng’s Night – Making Baby Jjimdak with Chicken Drumettes
After suffering from a fever, my child’s appetite decreased significantly, so I decided to order some chicken drumettes! While pondering what to make, I decided on a baby jjimdak, and my child ate it so well that I’m sharing the recipe now. ^^
Ingredients- 5 chicken drumettes (skin removed, scored)
- 1 potato (cut into bite-sized pieces)
- 1/5 onion (cut into bite-sized pieces)
- 1/5 zucchini (cut into bite-sized pieces)
- 1/4 carrot (cut into bite-sized pieces)
- A little bit of glass noodles (soaked for about 30 minutes)
- A little bit of sesame seeds (for garnish)
Seasoning- 3 Tbsp baby soy sauce
- 1/2 Tbsp baby sesame oil
- 1 tsp minced garlic
- 1/6 pear (grated, juice only)
- 500ml water

Cooking Instructions
Step 1
First, soak the glass noodles in water for at least 30 minutes. This ensures they become chewy yet tender when cooked with the jjimdak. Prepare the vegetables by cutting the potato, carrot, zucchini, and onion into bite-sized pieces. For a visually appealing dish that children might enjoy more, you can round off the edges of the potato, carrot, and zucchini. Carefully remove as much skin as possible from the chicken drumettes, then make a few score marks on the meat. This will help the seasoning penetrate deeply, making the chicken more flavorful.
Step 2
Pour 500ml of water into a pot and bring it to a boil. Once boiling, add 3 tablespoons of baby soy sauce, 1/2 tablespoon of baby sesame oil, and 1 teaspoon of minced garlic. Stir well to combine. Instead of sugar, I often use grated pear. Grate 1/6 of a pear and strain out the juice to add a natural sweetness that’s safe for babies. The pear juice also adds a subtle depth of flavor.
Step 3
When the seasoning mixture is boiling, add the prepared chicken drumettes and the cut vegetables (potato, carrot, zucchini, onion) to the pot. Cover with a lid and simmer over medium-low heat for about 20 minutes. This slow cooking process will tenderize the chicken and allow the vegetables to absorb the delicious flavors of the sauce.
Step 4
Once the chicken and vegetables are somewhat cooked and the sauce has reduced slightly, add the pre-soaked glass noodles. Continue to simmer for another 5 minutes, or until the glass noodles are cooked through and have absorbed some of the sauce, becoming wonderfully chewy and flavorful.
Step 5
Turn off the heat. For a final touch, sprinkle a little bit of sesame seeds on top. This adds a pleasant nutty aroma and makes the dish look more appealing.
