Batter Ingredients- 200g pancake mix (buchim garu)
- 180-200ml water
- 2 eggs
Cooking Instructions
Step 1
In a large bowl, whisk together the 200g of pancake mix, 2 eggs, and 180-200ml of water until smooth and free of lumps. Most pancake mixes are pre-seasoned, so you likely won’t need to add salt. Aim for a batter consistency similar to pancake batter – not too thin, not too thick.
Step 2
Cover the batter with plastic wrap and let it rest in the refrigerator for at least 1 hour. Resting the batter allows the flavors to meld and helps the pancake become crispier when cooked.
Step 3
Cut the bacon into slightly longer pieces, about 1-1.5cm thick. This length makes them visually appealing and easier to eat once on the pancake.
Step 4
Wash and thoroughly dry the chives, then cut them into lengths of about 4-5cm, suitable for the pancake. If using onion, slice it thinly. Thinly slice the Korean green chili peppers diagonally, and thinly slice the whole garlic cloves. Having all your filling ingredients prepped makes the cooking process much smoother.
Step 5
Heat a little oil in a pan over medium-low heat. Add the sliced bacon and lightly pan-fry until it’s lightly browned. This step renders some of the bacon fat and enhances its flavor. Remove the partially cooked bacon and set aside.

Add the prepared chives, onion (if using), and Korean green chili peppers to the rested batter. Gently toss everything together. Be careful not to overmix, as this can make the chives mushy; a gentle mix is key.

Heat a generous amount of oil in a frying pan over medium heat. Ladle about one scoop of the chive batter onto the hot pan. Use a spatula or the back of the ladle to spread it evenly into a round shape. Ensure it’s spread thinly and uniformly across the pan.

Once the batter starts to set on top, arrange the pre-cooked bacon pieces evenly over the surface. Add the sliced garlic as well. The bacon and garlic will cook through, adding wonderful aroma and flavor.

When the bottom side is golden brown and crispy, carefully flip the pancake using a spatula. A quick and confident flip, often accompanied by a slight ‘tok’ sound, helps prevent it from breaking and maintains its shape.
