Ingredients- 1/2 medium zucchini
- 4 Tbsp pancake mix
- 2 large eggs
- 8 slices bacon
- Baby greens (optional)
- Pinch of black pepper
- 1 pinch of salt

Heat a generous amount of cooking oil in a pan over medium heat. Add the julienned zucchini and stir-fry until it turns vibrant green and is tender-crisp, retaining a slight crunch. Avoid overcooking, as it will become mushy. Once cooked, season with a pinch of salt and a dash of black pepper. Turn off the heat. This stir-fried zucchini on its own is already delicious!
