Baek Jong-won’s recipes never disappoint, and today we’re making Chop Steak after a while! This is a slightly modified version of Baek Jong-won’s Chop Steak recipe that I’m following. Enjoy a delicious and satisfying meal right at home!

Main Ingredients

  • Beef (Sirloin for steak) 400g: Using thick-cut sirloin, perfect for steaks, will give you a wonderfully tender and rich flavor.
  • 1/2 Onion: Cut into large pieces to add sweetness and depth of flavor.
  • 1/3 each of Red and Yellow Bell Pepper: Adds vibrant colors and a crisp texture.
  • 3 Korean Green Chili Peppers: Their mild spiciness and crunch cut through richness. (Can be substituted with bell peppers)
  • 5 cloves Garlic: Adds a rich aroma. Slice them thinly.

Special Sauce & Seasoning

  • 2 Tbsp Oyster Sauce: The key ingredient for umami and deep flavor.
  • 1 Tbsp Honey: Adds a subtle sweetness that enhances the ingredients’ natural taste.
  • 1/2 Tbsp Plum Extract: Provides a refreshing sweetness and unique flavor.
  • 1/2 Tbsp Cooking Wine (Mirin): Helps tenderize the meat and removes any gamey odors.
  • 2 Tbsp Soy Sauce: Forms the base seasoning for the chop steak and adds color.
  • A dash of Sesame Oil: Drizzled at the end for a nutty aroma.
  • A pinch of Salt: Used to enhance the natural flavors and season the dish.
  • A pinch of Black Pepper: Elevates the beef’s flavor and adds a clean finish.
  • Olive Oil, as needed: For coating the beef and stir-frying the ingredients.

Cooking Instructions

Step 1

First, prepare the steak beef. Gently pat it dry with paper towels to remove excess moisture. Season generously with salt and black pepper. Finally, lightly coat the beef with olive oil. This step helps keep the meat tender and juicy when cooked, and prevents sticking.

Prepare the vegetables that will make your chop steak even more flavorful. Cut the onion into large chunks. Chop the bell peppers (red and yellow) and Korean green chili peppers into similarly large pieces, about 1-1.5 inches. Thinly slice the garlic cloves. Cutting the vegetables to a similar size as the beef pieces ensures a harmonious bite.

Heat a deep pan or wok over high heat. Add the prepared beef and sear it for about 70% doneness on each side. Since the beef was coated with olive oil earlier, you won’t need to add extra oil, which helps in achieving a beautiful sear. The key is to sear the outside quickly to lock in the juices. Avoid overcooking, as it can make the beef tough.

Remove the partially cooked beef from the pan and cut it into bite-sized pieces, about 1-1.5 inches. Cutting them too small can reduce the chewiness, while pieces that are too large can be difficult to cook evenly. Pre-cutting makes it easier to combine with the vegetables later.

In the same pan used for searing the beef, add the onions first. Lightly sprinkle a pinch of salt over the onions as they cook. This helps to bring out their natural sweetness and enhances their flavor. Sauté the onions over medium heat until they become translucent.

Once the onions are tender, add the bell peppers and sliced garlic to the pan. Season the bell peppers with a tiny pinch of salt as well, to enhance their flavor and natural sweetness. Stir-fry everything together, being careful not to burn the garlic, until the vegetables are slightly softened.

When the vegetables are cooked to your liking, return the pre-cut beef to the pan. Now, add the star sauce ingredients: oyster sauce, honey, soy sauce, and plum extract. Stir-fry everything together quickly over high heat, ensuring the sauce coats the beef and vegetables evenly. Adjust the seasoning by adding more oyster sauce or soy sauce according to your taste. Shake, shake, shake!

Finally, add the large-cut Korean green chili peppers and stir-fry briefly to finish. Their crisp texture and freshness will add another layer of deliciousness to your chop steak. (If you don’t have Korean green chili peppers, bell peppers are a good substitute). Just before turning off the heat, drizzle a little sesame oil for an extra nutty aroma.
