First, prepare the batter. In a bowl, add the sifted all-purpose flour (1/2 cup). Crack in 1 egg. Gradually add the water (1/2 cup) while whisking until you achieve a smooth batter with no lumps. The egg will give the batter a beautiful yellowish hue. (Optional: If you prefer some seasoning in the batter, add 1 Tbsp of soy sauce now. Alternatively, you can skip this and serve with a dipping sauce later.)

Prepare the star of this Jeon: the zucchini. Wash 1/2 medium zucchini thoroughly and julienne it thinly without peeling. Place the julienned zucchini in a bowl. Add a generous amount of dried baby shrimp (1/3 cup) for enhanced flavor. If you don’t have baby shrimp, finely crushed dried shrimp also works wonderfully.

Add the julienned zucchini and dried baby shrimp to the prepared batter. Gently mix everything together, ensuring all ingredients are coated with the batter.

Heat a frying pan over medium-low heat and add a generous amount of vegetable oil. Spoon portions of the batter onto the hot pan, spreading them into thin, even layers. Let them cook for about 3-4 minutes until the zucchini is cooked and the underside turns golden brown.

Carefully flip the jeon with a spatula and cook the other side until golden brown and crispy. Once both sides are golden and the edges look crisp, remove the jeon from the pan. Place them on a paper towel-lined plate for a moment to drain excess oil, which will further enhance their crispiness. Enjoy them while they are warm!
