For the Radish Salad (Mu Saengchae)

  • Shredded radish, about 3 handfuls
  • 2 Tbsp fine gochugaru (Korean chili powder)
  • 1 Tbsp brown sugar
  • 1 Tbsp minced garlic
  • 2 Tbsp vinegar
  • 2 Tbsp chopped scallions
  • 1 Tbsp sesame seeds (toasted)
  • 1 Tbsp anchovy sauce
  • Pinch of salt

For the Radish Salad Bibimbap

  • Freshly cooked rice
  • Fried egg
  • 1 Tbsp sesame oil
  • A little chopped scallions or chives (for garnish)

Cooking Instructions

Step 1

First, wash the radish thoroughly and peel it using a vegetable peeler. Then, use a mandoline slicer or a sharp knife to cut it into thin, even shreds. Finely chop the scallions.

Step 1

Step 2

Add the fine gochugaru directly to the shredded radish, followed by the brown sugar. This will give the salad its vibrant color and a touch of sweetness. There’s no need to pre-salt or drain the radish.

Step 2

Step 3

Next, incorporate the minced garlic (1 Tbsp) and vinegar (2 Tbsp). The vinegar adds a refreshing tang and helps to balance the flavors.

Step 3

Step 4

Add the chopped scallions, toasted sesame seeds (1 Tbsp), and a pinch of salt for seasoning. For an extra layer of savory depth, include 1 Tbsp of anchovy sauce.

Step 4

Step 5

Now, combine all the seasoning ingredients with the shredded radish. Gently mix and massage everything together with your hands until the radish is well coated. The radish will release some moisture, which helps to meld the flavors. Taste and adjust the seasoning with salt if needed.

Step 5

Step 6
