Instead of using a mandoline slicer, julienne the radish into thick strands with a knife (about 0.5cm thick). Cutting them thick like this will help maintain a pleasant crispness after stir-frying, preventing them from becoming too soft. Heat 1 tablespoon of perilla oil in a pan over medium heat. Add the julienned radish and stir-fry until it develops a subtle sweetness. Gently sautéing the radish until it becomes slightly translucent is key to bringing out its natural sweetness.

Once the radish starts to look slightly translucent, pour in 100ml of water or broth. Continue to stir gently, making sure the radish doesn’t stick to the pan as the liquid simmers.
