Cooking Instructions

Step 1

To make the Baek Jong-won style vegetable fried rice, we’ll start by preparing the ingredients. Finely chop the carrots, onion, zucchini, and ham into bite-sized pieces. Ham is delicious, so I’ve added a generous amount according to my preference. I used both regular non-salty ham and canned ham. You can adjust the amount of each ingredient to your liking. (Although not pictured, please also finely chop the green onion for making green onion oil.)

Step 2

Now, generously drizzle cooking oil into the pan and add the chopped green onions. Cook over medium-low heat to create fragrant green onion oil. I used pre-chopped green onions that I had stored in the freezer.

Step 3

Once the aroma of the green onions starts to release, add all the finely chopped ingredients to the pan. Stir-fry everything well.

Step 4

When the vegetables seem to be cooked to a certain extent, add a little salt to season. Then, add a pinch of pepper and stir-fry together. *Note: Baek Jong-won’s recipe often uses soy sauce, but since I’m making this vegetable fried rice for omurice, I’ve seasoned it with salt. Please keep this in mind.*

Step 5

Next, add the rice and stir-fry thoroughly, mixing it well with the ingredients. Make sure to break up any clumps of rice with your spatula. Once everything is well combined and the rice is heated through, taste and add more salt if needed, adjusting to your preference. That’s how you finish the Baek Jong-won style vegetable fried rice!
