Super Simple Geojedo Spicy Pork Stir-fry Recipe from ‘3 Famous Restaurants’ – No Frying Needed!

Inspired by the Geojedo-style spicy pork stir-fry featured on Baek Jong-won’s ‘3 Famous Restaurants,’ I tried a simple version that focuses on the natural flavors of the ingredients without frying in oil. It’s a wonderfully straightforward way to enjoy delicious spicy pork that anyone can make!

Main Ingredients
  • 500g Pork Shoulder (or front leg cut)
  • 1 Onion
  • 1 Scallion (Green Onion)

Seasoning Ingredients
  • 3 Tbsp Soy Sauce
  • 1.5 Tbsp Minced Garlic (generous amount)
  • Pinch of Black Pepper
  • 1 Tbsp Sesame Oil
  • 3 Tbsp Gochugaru (Korean Chili Flakes)
  • 2 Tbsp Sugar
  • 1 Tbsp Corn Syrup (or Oligodang)
  • Sesame Seeds (for garnish)
  • 1/2 tsp Minced Ginger (or a pinch of ginger powder)

Cooking Instructions

Step 1

First, wash and prepare the scallion and onion. Slice the scallion diagonally and the onion into thin strips.

Step 2

Place the pork shoulder (or front leg cut) into a wide wok or a large frying pan. Using a leaner cut like the front leg will result in a more delicate flavor.

Step 3

While most spicy pork stir-fries start by frying the meat, the Geojedo style uniquely adds about 1/3 cup (approx. 60ml) of water. This step helps tenderize the pork and allows the sauce to penetrate better.

Step 4

Now, turn the heat to high. Add the sugar, soy sauce, and gochugaru. Stir continuously to prevent burning and to allow the seasonings to evenly coat and reduce into the pork.

Step 5

Next, add the minced ginger. Ginger’s distinct aroma effectively eliminates any pork odor, contributing to a cleaner taste. You can also use ginger powder if fresh ginger is unavailable.

Step 6

Continue to simmer over high heat until most of the liquid has evaporated. During this time, taste the mixture and adjust the seasoning with more soy sauce, sugar, or corn syrup to suit your preference. Achieving a balance between sweetness and saltiness is key.

Step 7

When the pork is about 95% cooked down, add a generous amount of minced garlic. Adding garlic towards the end is crucial; it prevents the garlic from burning and losing its flavor, while effectively removing any gamey smell. This is a secret to maximizing its taste.

Step 8

Add another tablespoon of gochugaru and a good amount of black pepper. Black pepper enhances the spicy kick and overall flavor profile of the dish.

Step 9

Stir-fry until there is virtually no liquid left in the pan. This indicates that the sauce has beautifully reduced and coated the meat. It might look dry, but this is characteristic of the Geojedo style.

Step 10

Finally, add the prepared onion and scallions. Stir-fry them just until they become slightly tender, retaining some of their crispness and natural sweetness.

Step 11

Just before turning off the heat, drizzle in the sesame oil for a nutty aroma and rich flavor.
