Main Ingredients
  • 1 block firm tofu (suitable for pan-frying or stew)
  • 1 onion (small size; use 1/2 if large)
  • 1 green onion

Seasoning Sauce
  • 1/2 Tbsp minced garlic
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1/2 Tbsp sugar
  • 1 Tbsp cooking wine (mirin or sake)
  • 3 Tbsp soy sauce
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, prepare all the ingredients needed for the Tofu Jorim. You’ll need 1 block of tofu, 1 onion, and 1 green onion. For the seasoning sauce, measure out 1/2 Tbsp minced garlic, 1 Tbsp red pepper flakes, 1/2 Tbsp sugar, 1 Tbsp cooking wine, 3 Tbsp soy sauce, and 1 Tbsp sesame oil.

Step 2

Cut the tofu into bite-sized pieces, about 1.5-2cm thick. Any type of tofu will work. Slice the green onion diagonally or chop it finely. Slice the onion into strips. If you’re using a large onion, half of it will be sufficient.

Step 3

Heat a generous amount of cooking oil in a deep frying pan over medium heat. Place the sliced tofu in the pan and pan-fry it until golden brown on both sides. Frying the tofu for a longer time will make its exterior crispy while keeping the inside soft, enhancing the texture.

Step 4

Continue to pan-fry the tofu until all sides are a beautiful golden brown. A crispy exterior helps the tofu maintain its shape and prevents it from falling apart during the braising process.

Step 5

Once the tofu is nicely browned, carefully drain most of the excess oil from the pan. Too much oil can make the dish greasy.

Step 6

Pour water into the frying pan with the fried tofu. Add just enough water to partially cover the tofu; about half the height of the tofu pieces is good. Adding too much water will prolong the simmering time.

Step 7

Arrange the pan-fried tofu attractively in the pan, then evenly scatter the sliced onions and green onions over the top of the tofu.

Step 8

Now, add the prepared seasoning sauce ingredients. Start by adding 1/2 Tbsp of minced garlic.

Step 9

Next, add 1 Tbsp of red pepper flakes, 1/2 Tbsp of sugar, 1 Tbsp of cooking wine, and 3 Tbsp of soy sauce in order. (Since garlic was added in step 7, only add soy sauce up to this point).

Step 10

Turn the heat to medium-low and gently stir to combine the sauce ingredients. Once the sauce begins to bubble, let it simmer for about 5-7 minutes, allowing the tofu to absorb the flavors. If the sauce reduces too much during simmering, you can add a little more water. Continue simmering until most of the liquid has evaporated for a concentrated flavor.

Step 11

Finally, drizzle 1 Tbsp of sesame oil over the dish to finish. This adds a glossy sheen and a nutty aroma, completing your delicious Braised Tofu. Serve hot over a bowl of rice for a delightful meal!
