  • 1 packet Curry powder (follow package instructions)
  • 3 cups Water (approx. 600ml)
  • 1 Tbsp Cooking oil
  • 1 Tbsp Butter

First, prepare the boiled eggs according to your family’s preference. This recipe uses 5 eggs, but for a family of 4, if each person eats 2 eggs, preparing 8 eggs would be plenty. Thinly slice 1 onion.

Melt 1 Tbsp of butter in a heated pan, then add the thinly sliced onions. Sauté over medium-low heat for a considerable amount of time until the onions become translucent and tender. This slow sautéing is key.

Caramelizing the onions this way deepens the curry’s flavor and brings out their natural sweetness, resulting in a richer and smoother curry. Even if it takes a while, be sure to sauté them sufficiently. If you don’t have butter, cooking oil can be used as a substitute.

Once the onions start to turn golden brown, push them to the side of the pan or transfer them to a separate bowl. Add 1 Tbsp of cooking oil to the cleared space in the pan. Add the boiled eggs and roll them around to lightly brown their surfaces. This step adds another layer of flavor to the eggs.

After browning the eggs, pour 3 cups (approx. 600ml) of water into the pan.

Once the water comes to a boil, reduce the heat to medium. Add 1 packet of curry powder and stir continuously with a whisk to prevent lumps. Continue to simmer until the curry powder is fully dissolved and the sauce thickens.
