When you’re craving something spicy and flavorful after a long time, Baek Jong-won’s Osam Bulgogi is the answer! It’s simple to make yet incredibly delicious, making it perfect as a side dish or a snack with drinks. I’ll share his secret golden recipe for Osam Bulgogi in detail.
Main Ingredients- 1 Squid
- 200g Pork Belly
- 1/2 Green Onion
- 1/2 Onion

Step 1
First, let’s prepare the vegetables. Slice the onion into thick strips. Cut the green onion into large pieces or halve them lengthwise before slicing. Clean the squid by removing the innards and backbone, then slice it into bite-sized pieces (about 2-3 cm wide) and set aside.
Step 2
Heat a deep pan or wok and add the pork belly first. Cook it until it’s golden brown and slightly crispy. The rendered fat will add wonderful flavor. Once the pork belly is cooked, remove it and place it on a paper towel to drain excess oil. Slice the cooked pork belly into bite-sized pieces and set aside.
Step 3
Without adding extra oil to the same pan used for the pork belly, add the sliced green onion and stir-fry over medium-low heat until fragrant, creating ‘green onion oil’. Once you can smell the green onion aroma, toss in the sliced squid. Immediately add 1.5 tablespoons of sugar and stir-fry quickly over high heat. The sugar helps tenderize the squid and remove any fishy odor.
Step 4
As the squid starts to cook halfway, add all the prepared seasoning ingredients (1 Tbsp minced garlic, 1 Tbsp gochujang, 3 Tbsp gochugaru, 3 Tbsp soy sauce) and stir-fry rapidly over high heat. Ensure the sauce coats the squid well. Be careful not to burn it.
Step 5
If the sauce starts to burn or becomes too thick, pour in 1/2 cup (approx. 100ml) of water. Stir well to dissolve any clumps and create a smooth sauce. Continue to cook until the sauce has thickened slightly.
Step 6
Return the previously cooked pork belly to the pan and stir-fry together with the squid and sauce until everything is well combined. In the final stage, add the roughly chopped green onion and onion. Stir-fry just until the vegetables are slightly softened but still retain a bit of crispness. Avoid overcooking, as they will become mushy.
Step 7
Just before turning off the heat, drizzle a little sesame oil for a nutty aroma. Your delicious Osam Bulgogi is now ready! Enjoy it with a hot bowl of rice.
