Homemade Baek Jong-won’s Omurice Recipe + Basic Demiglace Sauce
Hello, it’s Gongjubu. It’s been a while since I’ve posted a recipe from Baek Jong-won. I tried making it myself recently, and to be honest, I’m not a huge fan of omurice, so I found it a bit rich. However, my baby absolutely loved it! It seems like a great dish for weekend meals, and the best part is that if you make a generous batch of the demiglace sauce in advance, you can easily whip up a quick and delicious meal for the kids by simply mixing it with rice anytime. Now, let’s get started with the homemade Baek Jong-won’s omurice recipe!
Fried Rice Ingredients- 3 cups minced onion
- 1 cup minced carrot
- 1 cup minced celery
- 1/2 cup minced green onion
- 1 cup minced meat (or bacon)
- 2 cups ketchup
- 1/2 cup soy sauce
- 1/2 piece butter
- 2 Tbsp sugar
- 2 Tbsp minced garlic
- 2 Tbsp vinegar
- Pinch of black pepper
- 1/2 cup cooking oil
Demiglace Sauce Ingredients- 2 Tbsp all-purpose flour
- 3 Tbsp cooking oil
- 1 Tbsp ketchup
- 2 Tbsp soy sauce
- 1 Tbsp vinegar
- 1 Tbsp sugar
- 1.5 cups water
- Pinch of black pepper
- 2 Tbsp all-purpose flour
- 3 Tbsp cooking oil
- 1 Tbsp ketchup

Cooking Instructions
Step 1
1. Prepare Fried Rice Ingredients: First, the ingredient quantities listed in the recipe might seem quite large. I personally halved the amounts when I made it, which yielded about 3-4 servings. I’ll explain the recipe using Baek Jong-won’s original quantities here. Turn on the heat under your pan, add 1/2 cup of cooking oil. Then, add the minced meat (or bacon), minced onion, minced carrot, minced green onion, and minced celery. Stir-fry everything until the onions become translucent. This step ensures all the vegetables are softened and fragrant.

2. Add Seasonings and Stir-fry: Once the ingredients are well stir-fried, add 2 Tbsp of minced garlic, 2 Tbsp of sugar, 1/2 cup of soy sauce, and 2 cups of ketchup. Continue to stir-fry until everything is evenly combined and coated.

3. Check the Fried Rice Appearance: As you cook, does your fried rice look this appetizing? The ingredients should be well mixed and starting to glisten.

4. Add Vinegar for Flavor: Here’s a tip for achieving a deep flavor without using Worcestershire sauce! Add 2 Tbsp of vinegar. This helps to balance the flavors and adds a subtle tang that enhances the overall taste.

5. Finishing Touches: Finally, add 1/2 piece of butter and a pinch of black pepper. Stir again until the butter is melted and fully incorporated, giving the rice a lovely sheen.

6. Adjust Sauce Consistency: Continue to simmer the fried rice over low heat until the sauce thickens to your desired consistency. This will result in a flavorful fried rice base for your omurice.

7. Amount of Finished Fried Rice: The fried rice I made with half the ingredients filled a large serving bowl generously. This delicious fried rice will be the filling for your omurice.

1. Start Making the Demiglace Sauce: Now, let’s move on to the star of the omurice – the demiglace sauce recipe! This sauce adds a rich flavor to dishes like tonkatsu or omurice. In a pan, heat 3 Tbsp of cooking oil and add 2 Tbsp of all-purpose flour. Stir constantly to prevent burning.

2. Make the Roux: Once the flour and oil are well combined, continue to cook over low heat until it turns a beautiful golden brown color. This step, called making a ‘roux,’ is crucial for the sauce’s thickness and flavor development.

3. Add Sauce Ingredients and Simmer: Once the roux reaches a lovely golden brown hue, add 1 Tbsp of ketchup, 2 Tbsp of soy sauce, 1 Tbsp of sugar, and 1 Tbsp of vinegar. Stir well to combine. Then, gradually pour in 1 cup (total of 1.5 cups) of water, whisking continuously to ensure there are no lumps. Add more water if needed to reach your desired consistency. Once all the ingredients are dissolved and the sauce begins to simmer, season with a pinch of black pepper and finish.

4. Demiglace Sauce Ready: And there you have it – your delicious homemade Baek Jong-won style demiglace sauce is complete! Drizzled over your omurice or mixed with rice, it’s absolutely wonderful.

5. Prepare the Omurice Rice: Now that the sauce is ready, shall we start making the omurice? Take a bowl of warm rice and add a generous ladleful of the prepared demiglace sauce. Mix it well until every grain of rice is coated with the rich sauce.

6. Prepare the Egg Mixture: For the egg coating, whisk 3 eggs for about 2 servings. You can skip adding salt, as the filling already has plenty of flavor.

7. Cover with Egg: Lightly grease a non-stick pan with oil and pour in the whisked egg mixture over low heat, creating a thin omelet-like layer. Before the egg is fully cooked, place the seasoned rice mixture in the center of the egg and carefully shape it.

8. Shape and Serve: Now, tilt the pan and carefully slide the omurice onto a plate. Flipping it from the pan can help create a beautiful half-moon shape. If you struggle to get the shape right, you can use aluminum foil to gently mold it into a neat shape after plating. Finally, generously pour the demiglace sauce over your finished omurice and enjoy!
