Ingredients

  • 1 small onion
  • 1 Korean green chili pepper (cheongyang-gochu)
  • 1 red chili pepper
  • Baek Jong-won’s all-purpose pickling soy sauce (enough to cover ingredients)

Cooking Instructions

Step 1

First, prepare one small onion. Wash it thoroughly and then slice it into bite-sized pieces, about 0.5 to 1 cm thick. Slicing them too thinly might affect the texture, so aim for a moderate thickness.

Step 1

Step 2

Add color to your pickles with one red chili pepper. Remove the seeds and thinly slice it. For a bit of heat, thinly slice one Korean green chili pepper (cheongyang-gochu) after removing the seeds. If you prefer less spiciness, you can substitute with an Asian pear chili (agak-gochu).

Step 2

Step 3

Place the prepared onion, red chili pepper, and green chili pepper into a clean, dry storage container. Gently toss them to prevent them from clumping together.

Step 3

Step 4

Now for the star of the pickles: the all-purpose soy sauce! Pour Baek Jong-won’s all-purpose pickling soy sauce over the vegetables in the container. Ensure the vegetables are completely submerged in the sauce; this is crucial for proper pickling. Adjust the amount of sauce based on the quantity of your vegetables.

Step 4

Step 5

Your Baek Jong-won’s Pickled Onions are ready to be enjoyed! While they are delicious right away, allowing them to pickle in the refrigerator for 3-5 days will deepen their flavor even further. They are exceptionally good served alongside grilled meats like pork belly or ribs, cutting through the richness and enhancing the meal. The satisfying crunch of the onion and the kick from the chili peppers create a perfect balance. The seasoning is just right – not too salty, making it an irresistible addition to your meals. Served on top of Korean pancakes (buchimgae), they evoke the delicious taste of those found in Gwangjang Market! They are also incredibly tasty with a bowl of hot steamed rice. It’s best to make a generous batch so you can enjoy them as they mature.
