  • Beef, thinly sliced for bulgogi (400g)
  • 1 stalk Green onion
  • A small amount of Carrot (approx. 1/4 carrot)
  • 2 Shiitake mushrooms

Seasoning Ingredients

  • Fish sauce 2.5 Tbsp
  • Sesame oil 1/2 Tbsp (for marinating beef)
  • Minced garlic 1/2 Tbsp
  • Sesame seeds 1/2 Tbsp
  • Cooking wine (Mirin, Sake, etc.) 1 Tbsp
  • Plum extract syrup 1 Tbsp
  • Soy sauce 1/2 Tbsp
  • Sesame oil 1 tsp (for shiitake mushrooms)

Cooking Instructions

Step 1

Gently pat the beef slices for bulgogi with paper towels to remove any excess blood. Properly draining the blood is key to preventing any gamey odors and achieving a clean taste.

In a bowl, combine the marinating ingredients: fish sauce (2.5 Tbsp), minced garlic (1/2 Tbsp), cooking wine (1 Tbsp), plum extract syrup (1 Tbsp), and soy sauce (1/2 Tbsp). Mix well to create the marinade. Add the beef to this marinade and gently knead with your hands to coat evenly. Let it marinate in the refrigerator for 1 hour. This marinating process tenderizes the meat and allows the flavors to penetrate deeply.

Clean the fresh shiitake mushrooms and thinly slice the caps. For the sliced shiitake mushrooms, add 1/2 Tbsp soy sauce and 1 tsp sesame oil and toss lightly to marinate. The fragrant aroma of the shiitake mushrooms will complement the bulgogi beautifully.

Heat a pan over medium-low heat with a little cooking oil. Add the chopped green onions and stir-fry until fragrant and slightly browned, creating scallion oil. Once the green onions are golden, add the julienned carrots and stir-fry together. The scallion oil adds depth and enhances the overall flavor.

When the green onions and carrots are somewhat softened, add the marinated beef to the pan over high heat. Stir-fry quickly, using chopsticks or a fork to separate the meat slices so they don’t clump together.
