Fish cakes are not only affordable but also have a wonderfully chewy texture. Here’s a simple recipe for stir-fried fish cakes using readily available ingredients, inspired by Baek Jong-won.
Main Ingredients- 3 sheets of square fish cakes
- 1/2 stalk of green onion
- 1 red chili pepper
- 1 green chili pepper
Sauce (using tablespoon measurements)- 1/2 Tbsp minced garlic
- 2 Tbsp soy sauce
- 1 Tbsp oligosaccharide
- 1/2 Tbsp sesame oil
- 1 Tbsp sesame seeds
- 50ml water

Step 1
Cut the fish cakes into bite-sized pieces according to your preference. For square fish cakes, cutting them into triangles works well. Round fish cakes can simply be sliced. Feel free to use your favorite type of fish cake!

For the complementary ingredients, we’ll use green onion, red chili, and green chili. While Baek Jong-won’s recipe often includes half an onion, this version focuses on the essential components for simplicity. Slice the green onion and chili peppers diagonally.

Heat about 1 to 2 tablespoons of cooking oil in a pan over medium heat. It’s important to use enough oil to prevent the fish cakes from sticking and burning. If you don’t have enough oil, add a little more.
Step 4
You can mix the sauce ingredients beforehand, or add them directly to the pan. For this recipe, we’ll add them as we go. Add about 1/2 tablespoon of minced garlic to the heated pan. Stir well until the garlic becomes fragrant, which should take about 30 seconds. Be careful not to burn the garlic.
Step 5
Once the garlic is fragrant, immediately add all the prepared fish cakes to the pan. If you are using onion, add it before the fish cakes and stir-fry it with the garlic until it becomes translucent.

Now, let’s season the dish. Drizzle in 2 tablespoons of soy sauce and 1 tablespoon of oligosaccharide. Add 1/2 tablespoon of sesame oil for a nutty aroma. The key to Baek Jong-won’s stir-fried fish cakes is adding about 50ml of water. This water helps to make the fish cakes moist and even more delicious. If you prefer a chewier texture, you can reduce or omit the water.
Step 7
Finally, add the sliced green onions, red chili, and green chili to the pan. Stir-fry everything together quickly until well combined. Avoid overcooking, as it can make the fish cakes tough. The goal is to reduce the liquid until the fish cakes are nicely coated. This entire stir-frying process should take about 5 minutes, preserving the fresh flavors.
Step 8
To finish, sprinkle 1 tablespoon of sesame seeds generously over the stir-fried fish cakes for an extra nutty flavor. Enjoy your delicious Baek Jong-won-style stir-fried fish cakes!
