  • 500g chicken breast
  • 1/2 head cabbage
  • 1/2 onion
  • 2 sweet potatoes
  • 5 perilla leaves
  • Approx. 1 serving of tteokbokki rice cakes
  • A small amount of green onion

Baek Jong-won’s Dakgalbi Sauce

  • 3 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp gochugaru (Korean chili powder)
  • 3 Tbsp soy sauce
  • 3 Tbsp sugar
  • 1 Tbsp sesame oil
  • 2.5 Tbsp minced garlic
  • 3 Tbsp mirin or soju
  • A pinch of black pepper
  • A little salt
  • 1 cup water

Cooking Instructions

1. Prepare the tteokbokki rice cakes: Soak the rice cakes in water beforehand. This ensures they cook quickly and become tender when added to the stir-fry later.

2. Make the special Baek Jong-won Dakgalbi sauce: In a bowl, combine 3 Tbsp gochujang, 3 Tbsp gochugaru, 3 Tbsp soy sauce, 3 Tbsp sugar, 1 Tbsp sesame oil, 2.5 Tbsp minced garlic, 3 Tbsp mirin or soju, a pinch of black pepper, and a little salt. Mix well to create the delicious Dakgalbi sauce.

3. Prepare the vegetables: Cut the 2 sweet potatoes into bite-sized cubes. Slice 1/2 onion and roughly chop 1/2 head of cabbage. Slice the green onion diagonally and thinly slice the 5 perilla leaves. Have all your vegetables ready.

4. Marinate the chicken breast: Cut the 500g chicken breast into generous cubes. Place the cubed chicken in a bowl and generously coat it with the pre-made Baek Jong-won Dakgalbi sauce. Let it marinate for about 10 minutes to allow the flavors to meld.

5. Boil water before stir-frying: Add 1 cup of water to a wide, deep pan or wok and bring it to a boil. You’ll add the chicken to this boiling water before stir-frying. This step helps prevent the sauce from burning and allows the ingredients to cook evenly.

6. Stir-fry the marinated chicken: Once the water is boiling, add the marinated chicken breast to the pan and stir-fry. At first, the chicken might seem submerged, but as you add the vegetables and the sauce thickens, it will become wonderfully rich and saucy, so don’t worry!

Add sweet potatoes, onion, and green onion: When the chicken is partially cooked and has changed color, add the remaining vegetables (sweet potatoes, onion, green onion) – excluding the perilla leaves and cabbage, as they cook quickly. Stir-fry until the sweet potatoes are tender when pierced with a fork.

8. Add perilla leaves and cabbage to finish: Finally, add the perilla leaves and cabbage to the pan and stir-fry briefly until everything is well combined.
