Main Ingredients

  • 300g thinly sliced pork belly (Daepae Samgyeopsal)
  • 1 block of tofu (approx. 300g)
  • 1 stalk of green onion
  • 2 Cheongyang peppers (Korean chili peppers)
  • 1/2 onion

Cooking Instructions

Step 1

First, prepare the fresh Cheongyang peppers by removing the stems and thinly slicing them. Slice the green onion diagonally or thinly into bite-sized pieces. These will add a spicy kick and aromatic flavor.

Step 1

Step 2

Peel the onion and slice it into strips about 0.5cm thick. The sweetness of the onion will enrich the flavor of the stew.

Step 2

Step 3

Gently rinse the tofu under running water and pat it dry with paper towels. Cut it into pieces about 2-3cm thick, suitable for simmering. Cutting it too thinly might cause it to break apart during cooking.

Step 3

Step 4

You can use the thinly sliced pork belly as is, or cut it into 2-3 pieces for easier handling in the pan. The balanced fat and meat content will add rich flavor.

Step 4

Step 5

Use a wide, deep wok or frying pan. Lay the sliced pork belly evenly on the bottom of the pan without overlapping. This is key, as the pork belly fat will render and infuse the tofu and vegetables with delicious flavor.

Step 5

Step 6

Arrange the cut tofu, sliced onion, chopped Cheongyang peppers, and green onions attractively on top of the pork belly. Adding colorful vegetables makes the dish more appetizing.

Step 6

Step 7

Now, let’s make the delicious seasoning. In a bowl, combine 1 Tbsp minced garlic, 2 Tbsp gochugaru, 1 Tbsp sugar, 2 Tbsp sesame seeds, 60ml soy sauce, 2 Tbsp perilla oil, and 1 Tbsp fish sauce. Add 180ml of water and mix everything well until the seasonings are evenly combined.

Step 7

Step 8

Pour the prepared seasoning mixture evenly over the ingredients in the pan. Place the pan over high heat and bring it to a boil. Cooking initially on high heat helps the ingredients cook faster and absorb the flavor.

Step 8

Step 9

Once the stew starts to bubble vigorously, reduce the heat to medium. It’s important to gently stir the ingredients, carefully pushing from the edges with a spatula or spoon to mix the sauce without breaking the tofu. Continue to simmer for about 5-7 minutes until the sauce thickens and coats all the ingredients. Your delicious Baek Jong-won style Pork Belly Tofu Stew is ready! Serve it hot over a bowl of rice for a delightful meal.
