This is the recipe previously known as ‘Baek’s Egg Ramen’. It gained popularity for its taste, said to be similar to commercially available sesame ramen. Today, we’re making Baek Jong-won’s Egg Ramen, perfect for a late-night snack or a satisfying meal.

Ingredients

  • 1 packet of ramen (Jin Ramen Spicy or Mild recommended, based on preference)
  • 3 cups of water (approx. 550ml)
  • 3 large eggs
  • 1 tablespoon sesame oil
  • 1/3 stalk of green onion, thinly sliced
  • 1 Korean green chili pepper (optional), seeds removed and thinly sliced

Cooking Instructions

First, choose your ramen. Baek Jong-won used Jin Ramen Spicy, but you can also use the Mild version or any other ramen you prefer. No matter which you choose, a delicious egg ramen awaits.

Typically, one packet of ramen requires about 3 cups (approximately 550ml) of water. For this Baek Jong-won ramen recipe, we’ll also use 3 cups of water.

Pour the 3 cups of water into a pot and place it on the stove over medium-high heat. Bring the water to a rolling boil.

Prepare 3 large eggs and a bowl for whisking them.

Carefully crack the 3 eggs into the prepared bowl. Using chopsticks, gently whisk the eggs until the yolks and whites are well combined. Try not to create too much foam.

Once the water in the pot is boiling vigorously, add the soup base from the ramen packet to create the broth. Let it simmer for a moment to allow the flavors to meld.

After adding the soup base, put in the ramen noodles. To prevent the noodles from becoming overcooked, it’s crucial to remove them within 1-2 minutes of adding them to the boiling water. This step is key because the noodles will continue to cook slightly when added back to the broth.

Transfer the partially cooked ramen noodles to a wide serving bowl. This allows the noodles to absorb the broth and soften naturally. Remember, undercooking them slightly at this stage is important for the final texture.

Now, carefully pour the whisked egg mixture into the boiling ramen broth that remains in the pot. Immediately turn off the heat. Using chopsticks, gently stir the broth about 10-15 times. This will create soft, wispy ribbons of cooked egg throughout the soup.

Finally, gently pour the flavorful broth with the cooked egg ribbons over the ramen noodles in the serving bowl. Ensure the broth coats the noodles evenly.
