Tomatoes are incredibly nutritious when eaten raw, but did you know that cooking them can actually enhance their nutritional benefits even further? Furthermore, when cooked, tomatoes become softer and more palatable. Today, I’ve prepared a delightful dish to enjoy tomatoes in a whole new way. We’ll hollow out fresh tomatoes, crack an egg inside each one, and then top them with various ingredients and mozzarella cheese before baking them in the oven. Ingredients- 3 large ripe tomatoes
- 3 fresh eggs
- 3 cm sausage, finely chopped
- 1/4 small onion, finely chopped
- 1 cup mozzarella cheese
- 2 pinches salt
- 1 pinch black pepper

Step 1
Let’s start by preparing the tomatoes. Carefully cut off the stem end of each tomato with a knife. Then, using a spoon, gently scoop out the pulp and seeds from the inside, creating a hollow cavity. We’ll use the scooped-out tomato pulp for the topping, so place a bowl underneath to catch any juices.

Now, it’s time to fill the hollowed-out tomatoes with eggs. Gently crack one egg into each tomato cavity, being careful not to break the yolk. Season the eggs with a pinch of salt and pepper. These will be baked in the oven, so aim for the egg whites to cook through while the yolk remains slightly runny for a delightful texture.
Step 3
Place the prepared tomatoes into a preheated oven at 200°C (390°F) and bake for about 15 minutes. If you don’t have an oven, an air fryer works wonderfully too! Adjust the temperature and time similarly, but keep a close eye on them as cooking times can vary. Check periodically to ensure the egg whites are set and the yolks are cooked to your liking.

While the eggs are baking in the tomatoes, let’s prepare the topping ingredients. Finely chop the scooped-out tomato pulp, the finely chopped onion, and the chopped sausage. Mincing these ingredients finely will ensure they blend well and create a delicious texture when sautéed.

Now, let’s sauté the chopped ingredients. Heat a little oil in a pan over medium heat. Sauté the onions until they become translucent, then add the chopped sausage and the reserved tomato pulp.
