Basil Pesto Carrot Tteokbokki: A Fusion Tteokbokki with a Unique Twist
Create a tteokbokki dish that stands out from the ordinary, featuring a delightful harmony of fresh basil pesto and sweet carrots. Main Ingredients- Tteokbokki rice cakes, 1 serving (approx. 150-200g)
- Carrot, 1/2 medium-sized
- Mini onion (or 1 small onion), 1
- Mozzarella cheese, 1 slice (or 1 slice of processed cheese)

Cooking Instructions
Step 1
First, prepare the tteokbokki rice cakes. If the rice cakes are too long, cut them in half into bite-sized pieces. Wash the carrot thoroughly, peel if desired, and thinly julienne it. Peel the mini onion and slice it into thick strips. Prepping the ingredients like this will make the cooking process much smoother.
Step 2
Heat about 1-2 tablespoons of cooking oil in a pan over medium heat. Add the julienned carrots first and sprinkle a pinch of salt. Stir-fry until the carrots are slightly softened and their sweetness begins to release. Then, add the tteokbokki rice cakes and stir-fry them together until they become soft and pliable. Once the rice cakes are ready, add the sliced onion and stir-fry until it becomes translucent. The onion will add sweetness and depth of flavor.
Step 3
Now it’s time to add the seasonings that will enhance the tteokbokki’s flavor. Pour 1 teaspoon of oyster sauce along the side of the pan; oyster sauce adds a savory umami taste. Next, tear or cut the slice of mozzarella cheese into pieces and place it on top of the tteokbokki. As the cheese melts, it will make the tteokbokki richer and creamier.
Step 4
Finally, add 1/2 teaspoon of basil pesto, spreading it evenly in the pan, to impart a fragrant aroma. It’s best to adjust the amount of basil pesto, as too much can make the flavor too strong. Stir-fry everything together until all ingredients and seasonings are well combined. Once the cheese is melted and coats the rice cakes, your delicious Basil Pesto Carrot Tteokbokki is ready!
