The round part at the base of the dill stems can sometimes have a papery outer layer attached. This layer can become tough and affect the taste, so it’s best to peel it off. Also, look for any dark, round bits near the roots and remove them for a cleaner taste.

Next, gently remove any wilted or damaged leaves. Simply snap them off. This completes the first stage of preparing the dill.

Since dill can carry soil or impurities, rinse it thoroughly under cold running water. Gently swish the dill in the water 2-3 times until it’s completely clean. Ensure all dirt is removed from the stems and leaves.

After washing, place the dill in a sieve and let it drain well. Properly draining the dill will help the sauce flavors penetrate better and result in a more delicious rice.

Now, let’s prepare the chili peppers that will add flavor and color to our dill sauce. Finely mince both the red and green chili peppers. You can adjust the amount of green chili to control the spiciness.

In a bowl, combine the prepared dill (50g), soy sauce (2 Tbsp), red pepper flakes (1 Tbsp), plum extract (1/2 Tbsp), crushed sesame seeds (1/2 Tbsp), and sesame oil (1/2 Tbsp). Mix everything well. Then, add the minced red and green chili peppers and stir again to create a perfectly balanced and aromatic dill sauce. The fragrance is already inviting!

It’s time to cook the bean sprout rice. Add the soaked rice (1 cup) and water (0.8 cup) to your rice cooker. Place the cleaned bean sprouts (175g) generously on top of the rice. Then, press the ‘pressure cook’ or ‘steam’ button to cook the rice. A crucial tip here is to use slightly less water than you normally would.

This is because the bean sprouts themselves release moisture as they cook. If you use the usual amount of water, the added moisture from the sprouts can make the rice too soggy or mushy. Therefore, aim for a slightly reduced water level, around 0.8 cups, to ensure perfectly cooked rice.

Once the rice is cooked, resist the urge to serve it immediately. Instead, gently fluff the rice with a spatula. This ‘resting’ or ‘mixing’ step allows the steam to distribute evenly, separating the grains and enhancing the overall texture and flavor of the rice.
