Main Ingredients

  • Beef brisket (usambgyeop) 150g
  • 1/4 Onion
  • Bean sprouts 50g
  • 1 pack Enoki mushrooms (about the size of a 500 won coin)
  • 3 Scallions (green onions)
  • Sesame seeds, a pinch
  • 1 serving Cooked rice

Seasoning Ingredients

  • 3 Tbsp Soy sauce (jin-ganjang)
  • 2 Tbsp Mirin (or rice wine)
  • 2 Tbsp Sugar
  • 2 Tbsp Water

Cooking Instructions

Step 1

1. Trim the base of the enoki mushrooms and rinse them lightly under running water. Shake off excess water. 2. Gently rinse the bean sprouts and drain well. Prepping your ingredients beforehand will make the cooking process much smoother.

Step 1

Step 2

Peel and thinly slice the onion into fine shreds. The natural sweetness of the onion will enhance the overall flavor as it cooks down.

Step 2

Step 3

Wash and finely chop the scallions into small pieces (about 0.5cm thickness). These will be used as a fresh garnish to brighten the dish.

Step 3

Step 4

In a small bowl, combine the soy sauce, mirin, sugar, and water. Stir well until the sugar is completely dissolved to create a delicious sauce for the beef. This sauce is the key to the dish’s savory and sweet profile.

Step 4

Step 5

Heat a pan over medium-high heat. Add the beef brisket and stir-fry, breaking it apart with chopsticks or a spatula, until it’s no longer pink and has a nice golden-brown color. Let the beef fat render out to add flavor.

Step 5

Step 6

Once the beef is mostly cooked, push it to the side of the pan. Add the thinly sliced onions to the cleared space and sauté until they become translucent and slightly softened.

Step 6

Step 7

When the onions are softened, pour the prepared sauce mixture evenly over everything in the pan. Be mindful of the heat to prevent the sauce from burning.

Step 7

Step 8

Bring the sauce to a simmer. Then, mix the beef and onions together with the sauce. Reduce the heat to medium-low and let it simmer, stirring occasionally, until the sauce thickens slightly and coats the beef beautifully. This process allows the flavors to meld and deepen.

Step 8

Step 9

Once the beef is well-glazed and the sauce has reduced, add the prepared bean sprouts and enoki mushrooms to the pan. Stir-fry them with the beef and sauce.

Step 9

Step 10

Stir-fry quickly for about 1 minute, just until the bean sprouts are slightly wilted but still retain some crispness. The goal is to lightly cook the vegetables without making them soggy. Immediately turn off the heat.

Step 10

Step 11

Spoon the hot cooked rice into a serving bowl. This will be the base for your flavorful topping.

Step 11

Step 12

Generously top the rice with the freshly stir-fried beef and vegetable mixture. Make sure to get plenty of the delicious sauce onto the rice.

Step 12

Step 13

Garnish with the chopped scallions and a sprinkle of sesame seeds. Your delicious Beef and Bean Sprout Rice Bowl is now ready to be enjoyed! Bon appétit!
