Prepare a simple yet nutritious breakfast using fresh lettuce that’s leftover from grilling meat. This recipe features a delightful combination of fresh vegetables and tender beef that will awaken your appetite.
Main Ingredients- 100g Beef (for bulgogi or stew)
- 1/4 White Onion
- 1/6 Red Onion
- 300g Fresh Lettuce
- 1/2 Apple
Flavorful Dressing- 2 Tbsp Low-Sodium Soy Sauce
- 2 Tbsp Oligosaccharide (adjust sweetness)
- 1 Tbsp Vinegar (for tanginess)
- 1/2 Tbsp Minced Garlic
- 1 tsp Sesame Oil
- 1 tsp Sesame Seeds
- Pinch of Black Pepper (optional)
- 2 Tbsp Low-Sodium Soy Sauce
- 2 Tbsp Oligosaccharide (adjust sweetness)
- 1 Tbsp Vinegar (for tanginess)
- 1/2 Tbsp Minced Garlic
- 1 tsp Sesame Oil
- 1 tsp Sesame Seeds
- Pinch of Black Pepper (optional)
Cooking Instructions
Step 1
Rinse the lettuce thoroughly under running water and tear it into bite-sized pieces (about 4-5cm). Peel the white and red onions, then slice them thinly into strips. Soak the onion strips in cold water for 5 minutes to make them crisp and remove their pungency.
Step 2
Core the apple and slice it into thick strips. To prevent browning and add a hint of freshness, you can soak the apple slices in a light sugar water solution (1 cup water with 1 tsp sugar) for a few minutes before draining.
Step 3
Thaw the beef (if frozen) either naturally or using a microwave. Lightly oil a pan and heat it over medium heat. Add the thawed beef, sprinkle with a pinch of salt and a dash of pepper, and stir-fry until it’s completely cooked. (Tip: I used stewing beef, but thinly sliced bulgogi or shabu-shabu beef will make the salad even more tender.)
Step 4
In a small bowl, combine the low-sodium soy sauce, oligosaccharide, vinegar, minced garlic, sesame oil, sesame seeds, and pepper. Whisk together to create the delicious dressing.
Step 5
Drain the lettuce and onions that were soaked in cold water thoroughly using a colander. Also, drain the apple slices well. Excess water can dilute the flavor of the salad.
Step 6
In a large bowl, combine the drained lettuce, onions, apple, and the cooked beef. Gradually add the prepared dressing, mixing gently. (Tip: The dressing can be quite salty, so start with a small amount and taste before adding more soy sauce or oligosaccharide to adjust to your preference. Toss everything lightly to coat all ingredients evenly with the dressing.)
