  • 150g beef brisket (thinly sliced)
  • 1 Tbsp coarse sea salt (for salting radish)

Seasoning

  • 1 Tbsp perilla oil
  • 1 Tbsp minced garlic
  • 1 Tbsp Korean soup soy sauce (Guk-ganjang)
  • 1 Tbsp fish sauce or tuna extract
  • 2 Tbsp chopped green onion
  • 1 tsp ginger powder (or a pinch of minced fresh ginger)

First, wash the half Korean radish, peel it, and then slice it thinly, about 0.3-0.5 cm thick. Next, cut the radish into matchsticks, about 0.3 cm wide. Sprinkle 1 tablespoon of coarse sea salt evenly over the julienned radish and let it salt for 30 minutes. After the radish wilts, rinse it lightly under running water to remove excess salt, and then squeeze out any remaining moisture thoroughly with your hands. This step helps to remove excess water from the radish, resulting in a better texture when stir-fried.

In a bowl, combine the drained julienned radish, the beef brisket, and all the seasoning ingredients: 1 Tbsp perilla oil, 1 Tbsp minced garlic, 1 Tbsp Korean soup soy sauce, 1 Tbsp fish sauce/tuna extract, 2 Tbsp chopped green onion, and 1 tsp ginger powder. Gently mix everything together with your hands, ‘jobal-jobal’ style, ensuring the seasonings are evenly distributed over the radish and brisket. Be careful not to overmix or mash the radish; a gentle hand is key.
