Main Ingredients

  • 50g thinly sliced beef (for Bulgogi)
  • 1 bunch King oyster mushroom (or similar)
  • 1/8 red onion
  • 1 chili pepper (mild or spicy, to your preference)
  • 1/2 egg
  • 15 bean sprouts (trimmed of head and tail)

Seasoning & Binder

  • 1 Tbsp soy sauce
  • 1/2 Tbsp minced garlic
  • Pinch of black pepper
  • Pinch of ground ginger
  • 1/2 Tbsp mirin (or cooking wine)
  • 1/2 Tbsp yuzu juice (or lemon juice)
  • Pinch of salt (for seasoning adjustment)

Cooking Instructions

Thinly slice the beef and spread it out. Gently pound the meat with the back of a knife to make it even more tender. Cut into bite-sized pieces, about 2cm in length, and sprinkle evenly with salt for a light seasoning. This step helps tenderize the meat and allows it to absorb flavor better.

Prepare the vegetables: Tear the king oyster mushrooms into long strips. Thinly slice the red onion. Cut the chili pepper diagonally into long strips, then cut them in half lengthwise once or twice to make them finer if you prefer a spicier touch. Trim the heads and tails off the bean sprouts. In a bowl, combine the prepared vegetables with the seasoning ingredients (soy sauce, minced garlic, pepper, ginger powder, mirin, yuzu juice, and salt). Toss gently to coat and let them marinate briefly. In a separate small bowl, whisk the egg with a tiny pinch of salt to create an egg wash.

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Take a bundle of vegetables wrapped in beef, dip the bottom side into the prepared egg wash, and carefully place it seam-side down in the hot pan. Continue adding the other beef and vegetable rolls. Spoon a little extra egg wash over the top exposed side of the beef rolls to ensure they cook evenly and become golden brown and delicious.

Cook over medium heat until the beef surface is set and lightly browned. Then, reduce the heat to low and continue cooking slowly until the inside is fully cooked through. Flip the rolls occasionally and cook until both sides are golden brown and the vegetables are tender. Be mindful of the heat to prevent the egg wash from burning, ensuring the beef is cooked through and the flavors meld beautifully for perfectly done beef and vegetable rolls.
