Fried Rice Ingredients
  • Beef brisket 120g
  • Chives (as much as desired, chopped into bite-sized pieces)
  • Ginseng 1 root (washed and finely minced)
  • Green onion 1/4 (thinly sliced)
  • Mushroom 1 (finely chopped)
  • Garlic 2 cloves (minced)
  • Onion 1/6 (finely chopped)
  • Sesame seeds 1 pinch (for added nuttiness)
  • Sesame oil 1 Tbsp (for finishing aroma)
  • Cooked rice 1 bowl (warmed)
  • Cooking oil 3 Tbsp (for stir-frying)
  • Oyster sauce 2 Tbsp (for umami)

Cooking Instructions

Step 1

First, prepare all the ingredients for the fried rice. Wash the ginseng, garlic, onion, and mushrooms thoroughly and mince them finely. Thinly slice the green onion and chop the chives into bite-sized pieces. Lightly pat the beef brisket with paper towels to remove excess blood. Keep the rice warm.

Step 2

Heat a pan and add the beef brisket. Cook it until it’s about 80% done. Be careful not to overcook, as it can become tough. Once cooked, place the beef brisket on paper towels to absorb some of the excess oil.

Step 3

Prepare the minced ginseng, minced mushrooms, minced onion, and minced garlic. Thinly slice the green onion and chop the chives into bite-sized pieces. Having each ingredient prepared separately will make it easier to add them in order while stir-frying.

Step 4

In a clean pan, heat 3 Tbsp of cooking oil over medium-low heat. Add the thinly sliced green onion and minced garlic and stir-fry until fragrant. Be mindful of the heat to prevent the garlic from burning.

Step 5

Once the aroma from the green onion and garlic is released, add the minced ginseng and minced onion and stir-fry them together. Sauté until the subtle fragrance of the ginseng is infused.

Step 6

When the onion starts to turn translucent, add the beef brisket (with excess oil removed) and stir-fry together. Continue stir-frying until the beef brisket is fully cooked.

Step 7

When the beef brisket is nicely cooked, add the warm cooked rice and the chopped mushrooms. Now, turn up the heat to high and quickly stir-fry using a spatula, ensuring the rice grains don’t clump together. Stir-fry until the mushrooms are tender.

Step 8

Once the rice and all ingredients are well combined and stir-fried, finally add the bite-sized chives, 2 Tbsp of oyster sauce, and a pinch of sesame seeds. Stir-fry lightly to combine. Avoid overcooking the chives to maintain their crisp texture. Drizzle in 1 Tbsp of sesame oil for a nutty aroma, then immediately turn off the heat.
