Beef Brisket Doenjang Jjigae (Soybean Paste Stew)

Essential Ingredients- 2 cups Anchovy-Kelp Broth (or rice water)
- 2 medium potatoes
- 1/3 zucchini
- 1/2 onion
- 100g beef brisket slices
- 1/2 block firm tofu
- 10cm piece of green onion
Optional Ingredients (for extra flavor)- 1 Korean green chili pepper
- 1 red chili pepper
- 1 handful chives (about 30g)

Cooking Instructions
Step 1
First, prepare your vegetables. Wash the potatoes and zucchini thoroughly, then slice them into 0.5cm thick half-moons. Dice the onion into roughly 1cm pieces. Finely chop the green onion, Korean green chili pepper, and red chili pepper. Cut the tofu into 1.5cm cubes.
Step 2
In a pot, combine 2 cups of cold water and 2 pieces of dried kelp. Let it steep for about 15 minutes to create a rich kelp broth. (You can also use anchovy broth or rice water.)
Step 3
Add the sliced potatoes to the kelp broth in the pot. Bring to a boil over medium heat and cook until the potatoes are slightly tender.
Step 4
Once the potatoes start to turn translucent, dissolve the doenjang (3 Tbsp) through a sieve into the pot to ensure it’s smooth. Once the doenjang is well incorporated, add the zucchini and onion and let it simmer for a bit longer.
Step 5
When the stew comes to a rolling boil, add the beef brisket slices. Gently stir to prevent the meat from clumping together as it cooks. The beef brisket will add a deeper flavor to the broth.
Step 6
Finally, add the minced garlic (1 Tbsp) and gochugaru (1 Tbsp). Then, add the cubed tofu, chopped green onion, chili peppers, and chives. Simmer for another moment until everything is heated through. Your delicious Beef Brisket Doenjang Jjigae is now ready! Feel free to add mushrooms or other vegetables according to your preference.
