Kimchi stew is a beloved dish for Koreans. Today, we’re making a special version using frozen beef brisket, known as ‘Woo Sam Gyup Kimchi Jjigae’. The rich, savory broth is truly exceptional and perfect for a comforting meal.
Main Ingredients- 1/2 head of well-fermented kimchi
- 1 ladleful of kimchi juice
- 1/4 onion
- 1 handful of green onions
Cooking Instructions
Step 1
First, prepare half a head of well-fermented kimchi, which is the star of kimchi stew. Cut the kimchi into bite-sized pieces, about 2cm in size. It’s best not to cut them too large or too small for a pleasant eating experience.

Transfer all the cut kimchi to a pot. Add one ladleful of kimchi juice, which will deepen the flavor of the stew. The kimchi juice significantly enhances the savory taste.

Slice the 1/4 onion into thick strips. Slicing them slightly thicker prevents them from disintegrating too much during cooking.

Add 2 tablespoons of cooking oil to the pot with the kimchi. Stir-fry the kimchi over high heat until it becomes slightly transparent and tender. This sautéing process mellows the sourness of the kimchi and enhances its savory notes. Ensure the kimchi is well-cooked.

Once the kimchi is sufficiently stir-fried, pour in 600ml of water. Add 1 tablespoon of fish sauce for an umami boost and bring it to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer.
