Cooking Instructions
Step 1
First, let’s make the special salad dressing. In a small bowl, combine the minced onion, minced apple, minced garlic, sugar, olive oil, balsamic vinegar, soy sauce, and a dash of black pepper. Stir everything together until well combined. It might seem like an unusual mix at first, but the flavor is surprisingly complex and delicious! Allowing the dressing to sit for a bit will enhance its flavors.
Step 2
Next, prepare the vegetables for the salad. Thinly shred the onion, carrot, garlic chives, and apple into bite-sized pieces. For the beef brisket, gently pat it dry with a paper towel and season it lightly with salt and pepper. This seasoning will enhance the natural flavor of the meat.
Step 3
To remove the pungent flavor from the shredded onion, soak it in cold water for about 5-10 minutes. Afterward, drain it thoroughly in a sieve. This process will mellow out the sharp bite of the onion while retaining its crispness.
Step 4
In a bowl, combine the drained onion with the shredded carrot and garlic chives. If you like, you can also add the shredded apple here to incorporate a fruity sweetness into the salad. Gently toss all these ingredients together.
Step 5
Now, let’s stir-fry the bean sprouts. Heat 1 Tbsp of cooking oil in a pan over medium-high heat. Add the bean sprouts and stir-fry quickly until they just begin to wilt. Then, add 1 Tbsp of oyster sauce and stir-fry for another moment. Immediately remove from heat and set aside to cool. Be careful not to overcook them, as you want them to retain some crunch.
Step 6
It’s time to cook the beef brisket. Add 1 Tbsp of cooking wine (Cheongju) to the seasoned brisket to eliminate any gamey odors. Heat 1 Tbsp of cooking oil in a pan over medium-high heat. Add the brisket and stir-fry until it’s fully cooked. Cooking it quickly over high heat helps to seal in the juices.
Step 7
Once the beef brisket is cooked, drain it on a sieve to remove excess oil. This step ensures the salad isn’t too greasy and offers a cleaner taste. All the components for the salad are now ready. All that’s left is to assemble and plate it beautifully!
Step 8
Begin by arranging the oyster sauce-stir-fried bean sprouts on the plate. Next, pile the mixed vegetables generously on top of the bean sprouts. Finally, add the cooked beef brisket. Generously drizzle the prepared special salad dressing over everything. Don’t be shy with the dressing; it brings all the flavors together.
Step 9
For a decorative touch, sprinkle a little of the reserved mixed vegetables on top. Behold your delicious Beef Brisket Salad, bursting with flavor! The tangy and sweet balsamic dressing, the crisp apple, the fresh vegetables, and the tender brisket create a perfect harmony. The apple in the dressing is the secret ingredient, adding a subtle sweetness and fragrance that elevates the flavors of the beef and vegetables. Enjoy this nutritious and delightful salad that allows you to savor both meat and vegetables together!
