Zesty Lemon Dressing Ingredients
  • Vegetable oil (like olive or grapeseed oil) 1 Tbsp (15ml)
  • Lemon zest (from 1/2 lemon)
  • Lemon juice 1 Tbsp (15ml)
  • Onion (finely minced) 1 Tbsp (15ml)
  • Soy sauce 1 tsp (5ml)
  • Honey 1 tsp (5ml)
  • Sesame seeds (crushed) 1 tsp (5ml)

Cooking Instructions

Step 1

First, prepare all the ingredients needed for the recipe. While a standard serving of meat is usually 120-150g, this recipe uses 50g of beef brisket for a lighter, enjoyable portion. You can use leftover flat beer that has lost its carbonation.

Step 2

In a pot suitable for shabu-shabu, pour in 300ml of beer and bring it to a rolling boil over high heat. Boiling the brisket in beer not only tenderizes it but also effectively removes any gamey odor.

Once the beer is boiling vigorously, add the beef brisket and gently separate the slices. Poach for about 1-2 minutes until cooked through. Be careful not to overcook, as this can make the brisket tough.

Rinse the bok choy and mixed greens thoroughly under cold water and gently pat them dry. It’s better to tear the greens into bite-sized pieces by hand rather than cutting them with a knife; this helps retain moisture and improves texture.
